How To make Schwarzwalder Kirschtorte (Black Forest Cherry Cake)
CAKE:
6 ea Eggs; Large
1 c Sugar
1 t Vanilla Extract
4 oz Unsweetened BakingChocolate*
1 c Flour; Sifted
SYRUP:
1/4 c Sugar
1/3 c ;Water
2 T Kirsch
FILLING:
1 1/2 c Confectioners' Sugar
1/3 c Butter; Unsalted
1 ea Egg Yolk; Large
2 T Kirsch Liquer
TOPPING:
2 c Sour Cherries; Canned, Drain
2 T Confectioners' Sugar
1 c Cream; Heavy, Whipped
8 oz Semisweet Chocolate Bar (1)
* There should be 4 squares of chocolate and it should be melted. ++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ CAKE: Beat eggs, sugar, and vanilla together until thick and fluffy, about 10 minutes. Alternately fold chocolate and flour into the egg mixture, ending with flour. Pour the batter into 3 8-inch cake pans that have been well greased and floured. Bake in a preheated 350 degree F. oven for 10 to 15 minutes or until a cake tester inserted in the center comes out clean. Cool cakes in pans for 5 minutes; turn out on racks to cool completely. SYRUP: Make syrup by mixing together sugar and water and boiling for 5 minutes. When syrup has cooled, stir in kirsch. Prick the cake layers and pour syrup over all 3 layers. FILLING: To make the butter-cream filling, beat together sugar and butter until well blended. Add egg yolk; beat until light and fluffy, about 3 to 5 minutes. Fold in Kirsch. CAKE ASSEMBLY: To assemble cake, place 1 layer on a cake plate. Spread with butter cream filling. Using 3/4 cup of the cherries, which have been patted dry, drop cherries evenly over cream. Place second layer on cake. Repeat. Place third layer on top. Fold 2 T confectioners' sugar into the whipped cream. Cover the sides and top of the cake with whipped cream. Decorate top of cake with remaining 1/2 cup cherries. To make chocolate curls from chocolate bar, shave (at room temperature) with a vegetable peeler. Refrigerate curls until ready to use. Press chocolate curls on sides of cake and sprinkle a few on the top. Chill until serving time.

For the cake:
6 eggs separate
180g/12tbsp sugar
100g/3/4cup flour
50g/1/3cup+1tbsp starch
50g/1/3cup+1tbsp unsweetened cocoa powder
2.5g/1/2tsp vanilla powder
A pinch of salt
A bit of lemon juice
For the filling:
700g/3cups drained sour cherries
200ml/3/4cup sour cherries juice
30g/2tbsp sugar
15g/1tbsp starch
1 cinnamon stick
The juice of 1/2 lemon
1liter/4cups cold heavy cream
60ml/4tbsp kirsch
45g/3tbsp sugar
8g/1tsp+1/2 cream of tartar
100ml/6-7tbsp kirsch
Grated dark chocolate to taste

Diese vegane Schwarzwälder Kirschtorte schmeckt auch Nicht-Veganern super gut!
Da ich Vegetarierin bin und immer unterstützen möchte, wenn Tiere geschont werden, erfülle ich mit diesem Video den Wunsch einen veganen Kuchen zu backen. Veganer Kuchen, vegane Torte, vegan backen: es ist nicht so schwer wie es scheint! Oftmals muss man nur wenige Produkte austauschen, wie zB bei dieser veganen Schwarzwälder Kirschtorte. Eier und Sahne mussten weichen. Das war's. Also traut euch ran und genießt!

VEGAN BLACKFOREST CHERRYCAKE
24er Springform / 9 inch springform
Zutaten Teig
280g 550 Weizenmehl
130g Zucker
1 Prise Salz
1 Pk Vanillezucker
1 ½ TL Backpulver
3 EL Backkakao
250ml Sprudelwasser
50ml neutrales Öl
+Kirschwasser
Zutaten Kirschen
1 Glas Kirschen
30g Stärke
25g Zucker
Zutaten Sahne
800g vegane Sahne
40g Zucker
1 Pk Vanillezucker
1 Pk Sahnesteif
vegane Schokoraspeln
Ingredients Batter
2 ¼ cups bread flour
½ cup sugar
pinch of salt
1 teaspoon vanilla extract
1 ½ teaspoons baking powder
3 table spoons cocoa powder
1 cup sparkling water
¼ cups natural oil
+cherry brandy
Ingredients Cherries
2 ½ cups tart cherries
¼ cups starch
¼ cups sugar
Ingredients Cream
4 cups vegan whip cream
¼ cups sugar
1 tsp vanilla extract
1 tbsp cream stabilizer
vegan chocolate flakes
Zubereitung Teig
1. die trockenen Zutaten gut miteinander vermischen
2. Sprudelwasser und Öl hinzufügen und mischen bis eine homogene Masse entstanden ist
3. fettet, bemehlt und legt die Springform mit Backpapier aus
4. die Backform mit Teig befüllen und bei 180°C Ober/Unterhitze für circa 45 min backen (Stäbchenprobe)
Zubereitung Kirschen
1. Die Kirschen in einen Sieb geben und das Kirschwasser auffangen
2. Zucker und Stärke mit 4-5 Esslöffel der Kirschflüssigkeit mischen, bis keine Klumpen mehr sichtbar sind
3. 10-12 der schönsten Kirschen zur Deko auf einem Zewa für später sammlen
4. 150ml der Kirschflüssigkeit zum kochen bringen und anschließend die Stärkemischung unter ständigem Rühren hinzugeben bis es andickt
5. von der Hitze nehmen und die Kirschen vorsichtig unterheben und vollständig auskühlen lassen
Zubereitung Sahne
1. die vegane Sahne mit Zucker, Vanillezucker und Sahnesteif steif schlagen
Aufbau
1. den Kuchen in drei Schichten schneiden und den untersten auf ein Cake Board geben
2. Boden mit Kirschwasser tränken und dann die Kirschmasse auf dem Boden verteilen und mit Sahne bedecken
3. den nächsten Boden darauf geben und Vorgang wiederholen
4. die gesamte Torte mit Sahne einkleiden und vegane Schokoraspeln zum Verzieren nutzen und die Deko-Kirschen darauf geben
Instructions Batter
1. mix dry ingredients well
2. add sparkling water and oil and mix until well combined
3. grease, flour and line spring form with parchment paper
4. pour batter into form and bake at 375°F for approx. 45 min (insert tooth pick)
Instructions Cherries
1. pour cherries into a sieve and collect the cherry water
2. mix sugar and starch with 4-5 tbsp of cherry water until no more lumps are visible
3. pick 10-12 of the nicest cherries and place them on kitchen towel for later
4. bring 1 ½ cups of cherry water to a boil and while whisking add starch mixture until it thickens
5. take off of heat and fold in cherries – let cool off completely
Instructions Cream
1. beat vegan cream with sugar, vanilla and stabilizer until stiff peaks form
Assembly
1. cut cake into three layers and place lowest on a cake board
2. soak layer with cherry brandy, add cherry mixture and top off with cream
3. place next layer on top and repeat procedure
4. cover cake in cream, decorate with vegan chocolate flakes and cherries

① Heat the heavy cream and melt the dark couverture chocolate to 50C.
② Add everything and blend well.
③ Store in fridge for at least 8hours and whip to desired consistency.
