►Ingredients for the Spaghetti and Meatballs
►Meatballs
1 kg beef mince
Half onion finely chopped
5 garlic cloves crushed
3 thin green chilies
70 grams cheddar cheese
Handful parsley finely chopped
1 tsp. blackpepper
1 tsp. salt
1 tbsp. plain flour for dusting
2 tbsp. oil for frying
►Pasta
1 litre water
1/2 tsp. salt
2 tbsp. olive oil
500g spaghetti
►Tomato Sauce (Pomodoro)
2 tbsp. oil
Half onion roughly chopped
1.5 tbsp. garlic paste
4 vine ripened tomatoes
1 tsp. blackpepper
1/2 tsp. salt
500g passata
2 chicken stock cubes
1.5 cup pasta water
7 - 8 basil leaves sliced

Ingredients
For the meat balls
760gm beef mince
1 tsp garlic paste
1 tsp ginger paste
2 tbsp onion paste
1 tsp Kashmiri chilli pwd
1 tsp cumin pwd
1 tsp pepper pwd
1 tsp garam masala
1/2 tsp turmeric pwd
2 eggs
Salt to taste
For the sauce
1/4 cup sesame oil
1 tsp ginger paste
1 tsp garlic paste
1 cup onion paste
2 tsp Kashmiri chilli pwd
1/4 cup pasta or pizza sauce
1/4 cup Worcestershire sauce
2 tbsp soy sauce
1/4 cup brown sugar
1/4 cup tomato sauce or ketchup
Directions
• To make the meatballs to a bowl add the beef mince, garlic paste, ginger paste, onion paste, Kashmiri chilli pwd, cumin pwd, pepper pwd, garam masala, turmeric pwd. Mix it
• Add the eggs and mix it again.
• Take a small amount of mince meat and make a small meatball.
• In a sauce pan pour oil and add ginger paste, garlic paste and onion paste and let it fry.
• Add the Kashmiri chilli pwd, pasta or pizza sauce, Worcestershire sauce, soy sauce, brown sugar and tomato sauce or ketchup.
• Add the meatballs and do not stir it. Put a lid on and let it cook on low for 15 mins.
• If your looking for a thicker sauce after 10 mins take of the lid and put on high for 5mins.

Saucy Meatballs in a Noodle Nest
Saucy meatballs + a creative spaghetti nest + cheese = ????
Ingredients:
340g spaghetti
3 large eggs, divided
1 ½ cups mozzarella, grated
450g beef mince
½ cup bread crumbs
2 cloves garlic, crushed
2 tbsp freshly chopped parsley, plus more for garnish
1 tin of chopped tomato & onion
1 Knorrox stock cubes – Tomato & Onion Flavour
1 cup water
Salt
Black pepper
1 tbsp olive oil
Method:
1. Pre-heat the oven to 180ºC.
2. Cook the spaghetti for about 8 minutes so they are soft but not entirely cooked.
3. Drain and rinse the spaghetti under cold water.
4. In a large bowl, toss cooled spaghetti with 2 beaten eggs and mozzarella.
5. Spray a muffin tin with cooking spray and using a fork, twirl the spaghetti into the cups, making a “nest.”
6. Using the bottom of a shot glass, firmly press down to create a well.
7. Bake until set, 10 - 15 minutes. Let cool. (If nests puffed up while baking, press down again with shot glass.)
8. While noodle cups bake, make meatballs: In a large bowl, combine beef mince, bread crumbs, garlic, remaining egg and parsley.
9. Season with salt and pepper. Roll into balls.
10. In a large pan over medium heat, heat oil. Brown meatballs, 4 minutes per side. Pour over the tinned tomato & onion, add Knorrox stock cube, 1 cup of water and allow to simmer for 10 – 15 minutes.
11. Spoon one meatball into each spaghetti nest, topped with some sauce.
12. Sprinkle with grated cheese and pop back in the oven for 5 minutes or until the cheese has melted.
13. Serve sprinkled with fresh parsley and ENJOY!

In a large bowl, pour in 1/2 cup of Masa Harina and 1/4 cup of warm water. Masa Harina is just a corn-based flour you can use to create authentic Mexican cuisine for these homemade meatballs. Stir these ingredients together and add to them 1 pound of lean ground pork, 1 pound of lean ground beef, 1 beaten egg, four cloves of minced garlic, 1-1/2 teaspoons of salt, and 1/2 teaspoon of freshly ground black pepper. Use your hands to mix everything together well and begin forming them into 1-inch cocktail meatballs, using your palms to roll them together. This meatball appetizer recipe should create between six to eight dozen meatballs. Place them on a 15 x 10 x 1-inch baking pan and bake for 20 to 25 minutes. While the party meatballs are browning to perfection, let's get started on the sauce. In a food processor, pour in a 28-ounce can of whole tomatoes, juice and all, along with three drained Chipotle chili peppers in adobo sauce. Puree the peppers and tomatoes together, pressing it through a sieve over a small bowl once they're pureed to remove the tough skins. Pour 1 tablespoon of cooking oil into a Dutch oven over medium heat. Once the oil is heated, add to the Dutch oven 1/2 cup of finely chopped onions and two cloves of minced garlic. Cook until the onion is tender and add the meatball sauce, 1-1/2 teaspoons of instant chicken bouillon granules, and 1 teaspoon of ground cumin. Bring the sauce to a boil then reduce the heat to medium and let simmer uncovered for ten minutes. Add the meatballs to the Dutch oven to coat them and give them one last layer of flavor. This recipe for meatballs makes a large batch, making them perfect party appetizers to give your get together a bit of a fiesta flair!
