This pasta is unique to one small town in Sardinia called Usini. Twirly andarinos is a tricky pasta shape to make and they are always served with a meat sauce. Francesca shares her recipe.
For the pasta: 500g semola rimacinata, 225ml water (just under 50% hydration, increase to 250ml if necessary), a pinch of salt
For the meat sauce: one onion, 250g stewing pork, 250g casserole beef, ground mixed spices (nutmeg, clove, anise or fennel, coriander), 3 bay leaves, 500ml passata, water as needed, salt and pepper.

Seafood Pasta Recipe: Fregola with Clams - Traditional Dish from Sardegna (Sardinia) Italy

Fregola is a type of pasta traditional to Sardegna and it is similar to Israeli couscous. It’s made from semola flour (sometimes called semolina abroad) rolled into balls and toasted.
In this video, we use 'vongole veraci' — clams recognized in Italy as among the best tasting available.
Tips for Choosing Clams, Cleaning Clams and Removing the Sand from Clam Broth:
1) Give each clam a tap on a work surface. Those that remain closed are likely healthy.
2) How to Clean Clams Before Cooking: Soak the healthy clams in salted water for at least 2 hours. Use 2 tablespoons (35 g) of salt per 4 cups (1 liter) of water for the salt water solution.
3) Drain the water solution before adding the clams to the pan for steaming. After steaming the clams, STRAIN all of the clam broth produced before using it. This will remove any residual sand.
4) Any clams that do not open with the others after steaming should be trashed and not consumed.

Fregola Pasta - 4.5 oz (150 gr)

Crushed Tomato - 11 oz (300 g)
White Wine (optional) - 1/4 cup (50 ml)
Garlic - 1 clove
Fresh Red Chili Pepper - 1 small or to taste
Parsley - 1/2 tbsp; minced
Extra Virgin Olive Oil - 4 tbsp
Salt - pinch or to taste
