How To make Chicken and Bay with Tomato and Basil Salsa
750 g large free-range skinless chicken breasts
cut in
2cm cubes 12 bay leaves
:
The Marinade 2 tbsp balsamic vinegar
2 tbsp runny honey
1 large garlic clove :
crushed
4 tbsp extra virgin olive oil
salt and pepper The Salsa :
1 tbsp white wine vinegar
3 tbsp extra virgin olive oil
1/2 tsp sugar
salt and pepper 3 spring onions finely chopped
500 g tomatoes :
skinned deseed chopd
20 basil leaves
4 large chicken breasts (approx 750g) makes 6 skewers
1. In a bowl, combine the marinade ingredients. Add the cubed chicken, stir to coat well and cover with clingfilm. Leave to marinate in the fridge for at least 6 hours or up to 24.
2. Thread the marinated chicken on to 6 skewers, inserting two bay leaves on each, and barbecue or grill until cooked through.
3. Meanwhile, to make the salsa, combine the vinegar, olive oil and sugar in a bowl and season to taste. Add the copped spring onions and tomatoes and toss well to combine. Stir in the basil leaves at the very last moment and then serve with the kebabs.

Chicken breast should always be juicy, never dry, or overcooked. The truth is, if the chicken breast is dry, you are most likely overcooking it. You are also most likely overcooking it because you are not using a meat tenderizer to even it out. Chicken breast is always thicker on one side and thinner on the other side so if you are not using a meat tenderizer to flatten it out, one side will always be super dry and the other side will take way longer to cook. Today I’m showing you a very simple way to make juicy chicken breast if you don’t have the time but for optimal results, I highly recommend you marinate any meat you work with overnight. Marinating chicken overnight will give you the best results but if you don’t have the time I’m showing you how to make a very delicious and juicy chicken recipe regardless.

3 boneless skinless chicken breasts pounded into equal sized filets salt to taste

Peri-Peri Chicken Recipe:
2 whole chickens' backbones removed
6 large garlic cloves smashed and roughly chopped
3 Medium shallots rough chopped
5 Fresno chilis rough chopped
5 tsp kosher salt (1 in marinade and 4 for chickens right before cooking)
3 dry bay leaves
3 tbsp smoked paprika
16 sprigs stripped thyme
4 tbsp tomato paste
1 lemon juiced
1 1/2 tbsp white wine vinegar
3/4 cup olive oil (177 ml)
