RECIPE:
“Wicked Easy” Baked Salsa Chicken
Prep Time 5 minutes; Cook Time 25 minutes; Total Time 30 minutes; Yield: 6 servings
Ingredients
3 each Chicken Breasts, boneless & skinless
2 Tbsp. Chili Powder / Taco Seasoning
1 cup Salsa (Mild, Medium, or Hot)
1 cup Shredded Cheese (Cheddar, Mozzarella, etc.)
3 oz. Sour Cream
Optional Ingredients
1 can Black Beans (approximately 14 oz.)
1 cup Corn Kernels, fresh or frozen
¼ cup Black Olives, sliced
Instructions
1. Preheat oven to 375 F.
2. Spray a 9X13 baking pan with non-stick cooking spray.
3. Cut chicken breasts in half lengthwise so you have 6 thin chicken breasts. If needed, flatten so they are of even thickness.
4. Pour salsa into pan. Stir in optional ingredients.
5. Sprinkle both sides of the chicken with chili powder / taco seasoning and place into pan.
6. Rotate chicken so that it is coated with the salsa and then bake in the oven for 30 minutes or until juices run clear.
7. Sprinkle with the shredded cheese and bake an additional 3 minutes or until cheese is melted.
8. Top each breast with a dollop of sour cream and serve with side of rice (white, Spanish, Mexican, Pilaf, etc.), side salad, vegetables, etc.

Hey guys!
Hope you all are doing well and no one else is sick!! If you need to clear up your sinuses make this delicious Salsa Chicken for din’ tonight! It’s pumped with flavor, but not too spicy…so don’t worry Ma, it will not knock your socks off.
If you are allergic to cilantro or you just don’t like it, you can replace it with flat leaf parsley. You can serve this over pasta like I do or make it extra healthy and serve it over quinoa or couscous! Whatever floats your boat!

INGREDIENTS:
1 tablespoon olive oil
1 1/2 tablespoons taco seasoning
4 boneless skinless chicken breasts, around 2 pounds total
1 jar 16 ounces of your favorite chunky salsa
1 cup shredded cheddar cheese
1 tablespoons chopped cilantro
Cotija cheese optional

Baked Salsa Chicken
Based salsa chicken recipe is scrumptious casserole style dinner that takes 40 minutes to cook. Juicy flavorful chicken baked along with layers of delicious Mexican ingredients like refried beans, black beans, corn and salsa topped with loads of cheese!
Prep Time: 5 minutes
Cook Time: 40 minutes
Servings: 4 servings
Ingredients
4 chicken breasts
16 oz refried beans, canned or homemade
1 cup (15 oz can) black beans
¾ cup corn, canned or frozen
2 cups chunky salsa, divided
1 packet taco seasoning or use 1 ½ tablespoon taco seasoning
1 tablespoon olive oil
1 ½ cups cheddar cheese (used white and yellow cheddar)
Salt to taste
Pepper to taste
For garnish-
Fresh cilantro
Instructions
Pre heat oven at 375°F.
If chicken breasts are large, slice it into half lengthwise. Pat dry chicken breast completely in kitchen towel. Season chicken breast with salt, pepper and taco seasoning on both sides. Rub to evenly spread the seasoning.
Heat olive oil in cast iron pan or any heavy bottom pan. Sear chicken breast on both sides by cooking it for 2-3 minutes on each side.
Remove from the pan and set it aside.
Grease a casserole or baking dish with cooking spray.
If you choose to use cream cheese, add it as first layer on the baking dish. I skipped cream cheese.
Add refried beans and spread it evenly on the casserole baking dish.
Add a layer of black beans. You can add as much or as little you prefer according to your taste preference. Canned black beans should be drained and rinsed before you use.
Add a layer of corn. If using canned corn, drain it completely and use.
Add half the quantity of salsa and spread evenly.
Place seared chicken breast on top of salsa.
Top each chicken breast with remaining salsa. Spread evenly all over the breast.
Sprinkle loads of fresh grated cheese on top.
Cover the dish with aluminium foil.
Bake in pre-heated oven at 375°F for 20 to 25 minutes.
Remove foil and bake for additional 10 minutes until cheese is bubbly and chicken is cooked through. Note: if you have meat thermometer use it to check doneness of chicken, internal temperature of chicken should read 165°F
Garnish baked salsa chicken with fresh cilantro.
Serve immediately.
