Smoked Salmon Cream Cheese Ball
RECIPE:
INGREDIENTS:
4 oz. smoked salmon, (I use alderwood smoked, find it near the cold seafood at the store)
16 oz. cream cheese
1 bunch green onions, sliced
1 Tbsp. lemon juice
1 cup chopped pecans
INSTRUCTIONS:
Start by checking the salmon for bones. I remove the skin and discard, then use two forks to shred it and see if there are any bones. Sometimes I find a few, sometimes I find none.
Add the salmon, cream cheese, green onions, lemon juice and pepper to a large bowl and blend together using a hand held electric mixer (or blend together using a stand mixer and with the blade attachment).
Form the salmon cream cheese into a ball. Spread the pecans on to a plate and roll the ball into the nuts, you may need to place the nuts on with your hands.
Place on a serving platter with desired dippers. I love wheat thins, Raincoast crisp crackers, but often serve with a cut up sourdough baguette.

Smoked Salmon and cream cheese Canape/ Appetizer/ Finger Food
Ingredients for 12 serve:
Chives 3 g
Lemon 40 g
Philadelphia cheese 100 g
Lebanese cucumber 120 g
Butter 30 g
Baguette slices 12
Smoked salmon 100 g
Dill 1 g
Preparation (30 minutes):
1. Finely slice the chives. Juice the lemon
2. Bring the Philadelphia cheese to room temperature, add the chives, lemon juice and seasoning and blend to combine until smooth
3. Slice the cucumber
4. Toast and butter the baguette slices
5. Pipe a small amount of the cheese mixture onto the baguette slices
6. Place the cucumber slices on top and pipe on some more cheese mixture
7. Form the salmon into rosettes and sit on top. Garnish with dill sprigs

Serving Time: 2 hours
Yield: 4-6 servings
Ingredients:
1 cup smoked salmon
2 blocks cream cheese, softened
2 tsps. lemon zest
2 tbsps. garlic, chopped
2 tbsps. red onions, chopped
Salt and pepper to taste
1 (150g) pack Meadows Cocktail Mixnuts
3 tbsps. dill, chopped
1 tsp. lemon zest
Salt and pepper to taste
FOR SERVING:
Crackers
Crostini
Cucumber, sliced
Red onion, sliced
Dill
Meadows Spumante Prosecco Extra Dry
Procedure:
1. In a food processor, combine smoked salmon, cream cheese, lemon zest, garlic and red onions. Process until just combined. Season with salt and pepper to taste.
2. Lay several sheets of cling film on a tray. Transfer the smoked salmon cream cheese mixture here, then wrap with cling film and roll into a ball. Freeze for 1 hour.
3. In a food processor, combine Meadows Cocktails Mixnuts, dill, and lemon zest. Process until you achieve semi-fine crumbs. Season with salt and pepper to taste. Transfer into a plate large enough to accommodate coating the cheese ball with the crumbs.
4. Remove cream cheese ball from the chiller, then unwrap onto the plate of crumbs. Roll it around while pressing the crumb mixture into the ball to coat well. Chill for 30 minutes.
5. Transfer chilled cream cheese ball on a serving tray, and arrange with crackers, crostini, cucumbers, red onions, and dill. Enjoy with Meadows Spumante Prosecco Extra Dry.
