Vegan Almond Cheese - Mind Over Munch Episode 31
How To Make Homemade Vegan Almond Cheese! Raw vegan, non-dairy cheese alternative! A perfect healthy substitute for cheese lovers who either can't or choose not to eat it. I show you how to bake the cheese at the end to create a rind, and this would obviously make it not raw, but if you stop before that step, it is a delicious raw treat!

Ingredients
1 cup raw almonds
1/2 cup water
1 Tbsp olive oil
2 Tbsp lemon juice
2 tsp garlic
1/2 tsp salt
1/4 tsp pepper
Procedure
Soak your almonds in water overnight
The next morning, peel away the almond skin
Pour your peeled almonds into your food processor along with olive oil, lemon juice, garlic, salt and pepper, and water.
Blend until it reaches a nice smooth consistency.
Place a strainer over a large mixing bowl, and lay on a couple layers of cheese cloth. Pour your almond cheese blend into the cheesecloth and wrap it up.
Transfer the bowl with the strainer and almond cheese to the fridge for 12 hours, or overnight.
To keep it raw, stop here and devour! To add a rind, place your almond cheese ball onto a baking sheet lined with parchment paper and sprayed.
Mold it however you'd like! I squared off the edges of mine so it resembles a wheel of brie.
Place in an oven preheated to 300ºF for 30-40 minutes.

This Almond Havarti Philly Cheese Ball snack is the perfect combination of savory and sweet! Made with creamy Havarti cheese, tangy feta goat cheese, and a hint of oregano, this cheese ball is sure to please your taste buds. I also added some diced green onion for a bit of freshness. To make it even more irresistible, I rolled the cheese ball in a mix of caramelized walnuts and honey roasted almonds.
In the video, I show you how easy it is to make this snack in just a few minutes. And here's a pro tip: add some sweet honey to the mix for an extra burst of flavor! I wish I had thought of it earlier, but I'll definitely try it next time.
Here are the ingredients I used:
Havarti creamy cheese from Castello (1/2 cup)
Horizon Organic pasture-raised milk (1 tablespoon)
Organic oregano from Spicely Organics
Feta goat cheese from Sierra Nevada Bella Capra
Diced green onion
Multigrain club crackers (multi=best!)
Philadelphia cream cheese (entire container)
Caramelized walnuts from Mitica (1/2 cup)

How to make the PERFECT Almond-Crusted Cheeseball
This almond-crusted cheeseball recipe is a definite crowd-pleaser & its EASY to make!
Recipe:
1 cup Blue Diamond Smokehouse Almonds, coarse chopped
2- 8 oz. cream cheese, cubed
1/2 cup regular sour cream
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp Worcestershire sauce
2.5 oz reduced sodium real bacon bits
4 oz. sharp cheddar cheese, freshly shredded
4 oz. Monterey Jack cheese, freshly shredded
2 green onions, chopped
Blend cream cheese in mixing bowl until smooth. Add shredded cheese, bacon bits, green onion, garlic powder, onion powder, Worcestershire sauce and sour cream. Blend together thoroughly using a hand mixer or spatula. Grease hands with spray can olive oil and mold the mixture into a ball shape. Cover bowl in plastic wrap and refrigerate the ball for one hour to set. Place coarse chopped almonds onto a plate and gently press the ball onto the almond spread. Rotate the ball around the plate to gather as much of the almond pieces as possible. Cover the entire ball until little to no mixture is showing. Place back in the refrigerator for 3 to 24 hours. Take out 20 minutes before serving. Serve with assorted crackers and vegetables. Enjoy!

1 x cup almonds (soaked vernight)
2 x cups water
Dates or maple syrup for a sweet flavour
- Blend all ingredients and strain with a muslin into a bowl .
- Store it for up to 4-5 days in the fridge
ALMOND PULP ENERGY BALLS ????????????
1 x cup almond pulp
3 x tbsp peanut butter
1/3 x cup maple syrup
2 x tbsp coconut flour
1 x chocolate bar
Pinch of salt
Optional:cocoa powder, shredded coconut
- Add all ingredients in the blender and mix.
- Roll them into a ball .
- Roll them in cocoa powder or shredded coconut for a nice coating touch ????????
- Store them in the fridge for up to 5 days or freeze them .

Chocolate Maca Energy Balls
Ingredients:
1 cup almond pulp
20 medjool dates, pitted
½ cup hemp seeds
⅓ cup cacao powder
2 tbsp maca powder
1 tsp vanilla extract
½ tsp cinnamon
¼ tsp salt
Optional decorations: hemp seeds and cacao powder
Instructions:
Create almond milk in the Almond Cow machine.
Remove almond pulp from the filter basket. Squeeze the almond pulp with a paper towel to remove any excess liquid.
Add the dried almond pulp, medjool dates, hemp seeds, cacao powder, maca powder, vanilla extract, cinnamon, and salt to a food processor. Process until a smooth dough forms. Let the dough chill in the freezer for at least 30 minutes.
Roll the dough into 1-inch balls. Toss them in hemp seeds or cacao powder to decorate (optional). Keep stored in the freezer.
