Ingredients:
1 lb mild Italian sausage
1 lb ground beef
1 lb Velveeta cheese, cubed
1 tbsp oregano
1 tbsp chili powder
¼ cup chopped red onion
6 cocktail rye bread, sliced into quarters
1 oz lettuce, torn
⅓ cup mayonnaise in a piping bag
Parsley, chopped, for garnish

0:10 Cook Italian sausage and ground beef in a skillet and drain oil. Add oregano, onion, and chili powder and mix well. Add cubed cheese and stir until all is melted. Set aside.
0:32 Squeeze about 1 tsp of mayonnaise on one side of the bread and top one piece of torn lettuce.
0:41 Spread about 2 tbsp of mixture on each slice of cocktail rye bread, garnish with parsley and serve.

Hanky-Pankys! A good scrumptious snack or appetizer, and something the you and old folks-alike will surely enjoy. Keep a bunch in your freezer in case the neighbors stop by for a visit, but also ideal for any family get-together.
//Hanky-Pankys Recipe//
12 - Oz - 1 lb. Sausage (or combo of sausage and hamburger)
8 - Oz - 1 lb Velveeta brand processed cheese
1 - Loaf Pepperidge Farm Party Rye (light or dark)
(Optional items: 1 - tsp Worcestershire shire sauce and/or chopped sun-dried peppers
If using plain sausage add some Oregano or Italian seasoning.
Crumble and cook sausage in large skillet over medium high heat until evenly brown.
Add Velveeta cheese to meat allowing it to melt in to a “gooey” texture.
Spread Hanky-Panky mixture on bread.
Place on cookie sheet and bake at 350 degrees for 5-8 minutes until light brown and crispy.
These can be made ahead and frozen.. Pop in oven approximately 10-15 minutes if frozen.

Hanky Pankies! A delicious midwestern appetizer classic!

This dish may sound naughty, and it can be, but it is immensely delicious, super easy and inexpensive! All the good things! These are also known as Sh!t on a Shingle, Polish Mistakes (I resemble that remark!), and of course, Hanky Pankies. Serve these in your rumpus room at your next rumpus. Just make sure it doesn’t get out of hand!
One thing that’s great about this is you can use the meat and cheese mix for other things. Baked potatoes, hot dogs, warm dip with crackers, in a bread bowl, and more. If you can dream it, you can do it!
Hanky Pankies:
- 1lb bulk sausage, preferably hot
- 1lb ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon fresh ground black pepper
- 1 teaspoon Worcestershire Sauce
- 1 16oz block Velveeta, cut into cubes
- Cocktail pumpernickel and/or rye (or thin sliced full size loaf slices cut in half)
1. In large frying pan over medium-high heat, brown sausage and beef, using spatula to break into small even pieces
2. Once it is browned, drain off excess fat and return to medium-low heat
3. Add garlic powder, onion powder, pepper, and Worcestershire Sauce. Stir to fully combine and reduce heat to low.
4. Add Velveeta cubes and slowly melt until homogenous. Once it is fully melted and even, turn off heat. Check salt level, but most likely will not need.
5. On sheet pan sprayed with cooking spray, lay out your bread. Add enough of the meat mixture evenly over each slice to just over the thickness of the bread. At this point you can either freeze these on the sheet pan and transfer to a zip top bag and store in freezer for future use, or continue on to next step to serve immediately.
6. Top each piece with shredded cheese of your choice. Also top with anything else you want. Pickled sliced jalapenos pair beautifully.
7. Bake in 400 degree F oven for 15 minutes
8. Remove from oven and transfer to serving dish. Serve hot.
9. Enjoy!
