How To make Russian Shashlik
1 1/2 lb Lamb, cut from leg
1 sm Onion, finely-minced
2 lg Garlic, cloves, fine-minced
1 lg Shallot, minced
1 tb Parsley, freshly-chopped
1 1/4 c Pomegranate juice, unsweet.
-(available at Health Food - store) 2 tb Corn oil
4 ds Cayenne pepper
Tart-and-sweet and slightly astringent pomegranate juice the base for the marinade in the recipe for this popular dish. True Russian style? Da! Russian overabundance of calories? Nyet! Trim away all fat from meat. Cut into 2" chunks. Place in small bowl together with onion, garlic, shallot, parsley, cayenne pepper and pomegranate juice. Cover and refrigerate overnight. Remove meat from marinade and pat dry. Skewer the meat, using four substantial skewers. Brush with oil. Broil under very high heat, turning often until done. Some prefer it slightly pink (12 minutes). Well done will take about 20 minutes. Remove from skewers and serve on a heated plate with Kasha. VARIATIONS: Include 2 green peppers cut into 12 chunks, 4 tomatoes cut into quarters, and 4 small, white onions, peeled and cut in half. Skewer alternate chunks of vegetable and meat chunks. Proceed according to recipe.

The first time I got this original russian food recipe for BBQ served from a russian colleague, Viktor at his birthday party in his 'Schrebe' garden. It was lunch time and all officemates were invited. Incidentally, it was February and it was still quite cold in Germany but luckily the sun was shining. Since then, the Viktor Russian skewers as we now call the dish, is for me and my family a barbeque hit every summer. The Shashlik or Kebab meat is marinated in a special way and makes the meat soft and very tasty.
Ingredients:
2 kg streaky pork from the neck.
Marinade for pork:
1 kg onions.
5-7 bay leaves.
6 tablespoons olive oil
4 tablespoons vinegar (concentrated)
salt
freshly ground black pepper.
Barbecue marinate instructions:
Marinate meat 14-24 hours.
and mix in between
barbecue instruction:
2 x
10 - 15 mins
at high heat
between turning skewers through

Shashlik and known as Şaşlık in Turkey is an amazingly tender grilled beef kebab. The juiciest and most tender grilled shashlik skewers ever.
The word shashlik is known as Russian however it is indeed of Turkic origin. In Turkic languages, the word shish (shash) means skewer, and shishlik / shashlik can be translated as skewerable.
It was originally made of lamb, but nowadays it is also made of beef, chicken and pork. I will make my favorite version today, with marinated beef, as it is done in Turkish cuisine.

Ingredients:
• 500 g beef tenderloin
• 2 red onions
• 1 cup double cream
• ¼ cup soy sauce
• ½ cup olive oil
• 1 tsp black pepper

Grilled Pork Kabobs (shashlik)
These juicy grilled pork kabobs (shashlik) are marinated in a garlicky red wine and grilled to smokey perfection. It’s a dinner recipe perfect for summertime!

Ingredients
4 lb boneless pork shoulder
6 garlic cloves
2 1/2 tbsp onion
2 tsp salt
1 tsp black pepper
1 red onion
1/2 cup red wine
1 cup mayonnaise
1 red bell pepper
1 green bell pepper
1 tsp salt
1 tsp black pepper
3 tbsp olive oil
Instructions
1. Trim and discard any extra fat around the pork shoulder. Then cut it into 2 inch chunks.
2. Place the pork into a large bowl and add the pressed garlic cloves, grated onion, salt, pepper, red wine, and mayonnaise. Combine everything together then cover with plastic wrap and refrigerate overnight or at least 6 hours.
3. Now soak the wooden skewers in cold water for about 30 minutes to 1 hour.
4. Chopped the peppers and red onion into 1 inch pieces then place them in a bowl and seasons with salt, pepper, and olive oil.
5. Place the marinated pork and seasoned vegetables onto the skewers and grill on medium high heat for about 8-10 minutes turning the kabobs 3 times. To make sure your pork is fully cooked, look for an internal temperature of 145 degrees Fahrenheit.
