How To make Russian Shashlik
1 1/2 lb Lamb, cut from leg
1 sm Onion, finely-minced
2 lg Garlic, cloves, fine-minced
1 lg Shallot, minced
1 tb Parsley, freshly-chopped
1 1/4 c Pomegranate juice, unsweet.
-(available at Health Food - store) 2 tb Corn oil
4 ds Cayenne pepper
Tart-and-sweet and slightly astringent pomegranate juice the base for the marinade in the recipe for this popular dish. True Russian style? Da! Russian overabundance of calories? Nyet! Trim away all fat from meat. Cut into 2" chunks. Place in small bowl together with onion, garlic, shallot, parsley, cayenne pepper and pomegranate juice. Cover and refrigerate overnight. Remove meat from marinade and pat dry. Skewer the meat, using four substantial skewers. Brush with oil. Broil under very high heat, turning often until done. Some prefer it slightly pink (12 minutes). Well done will take about 20 minutes. Remove from skewers and serve on a heated plate with Kasha. VARIATIONS: Include 2 green peppers cut into 12 chunks, 4 tomatoes cut into quarters, and 4 small, white onions, peeled and cut in half. Skewer alternate chunks of vegetable and meat chunks. Proceed according to recipe.

Enough sweet recipes she said ???? I realized that I have been making sweet recipes after sweet recipes and it has been ages already since I made a savory recipe. So that had to be changed and since it is summer now I thought I would share a marinade recipe for grill meat as I think that summers are meant for grilling????????????So today I will show you my marinade recipe for russian style grilled pork skewers or shashlik???? I absolutely love this super simple marinade as it makes the meat really tender and gives it a lovely taste???? If you try it out let me know what you think about it???? RECIPE
about 1kg pork neck
4 white onions
500ml kefir
2tsp salt
2tsp dry garlic
2tsp fine black pepper
1tsp dry thyme (optional)

You can then cook the meat either on an electric grill or on fire. I would recomment to cook it on fire as that way you get the best taste from the meat. I will share a video soon of how we grill our shashlik on fire. Stay tuned????

3 Tablespoon of Mayo per a Chicken Breast
Zest and Juice of 1 Lemon
1 Medium Onion (Grated)
1 Tablespoon of Salt
1 teaspoon of Paprika
1 teaspoon of Ground Black Pepper
2 teaspoon of Garlic Powder or 3-4 cloves of Fresh Garlic

Today we will be doing chicken shashlik recipe. Its really healthy, vibrant, easy and delicious meal. Not only it looks great, but tastes super yummy, juicy and rich in flavours. Chicken shashlik is a very popular chicken recipe. Chicken pieces are weaved on skewers and then either they are fried or grilled on on hot charcoal. Try this with other veg too like mushrooms and baby corn. You can also cook this on a barbecue - just make sure the chicken is cooked thoroughly and don't use any leftover marinade to brush the cooked chicken with. Shashlik is basically like a shish kebab, which translates to skewered meat and is a dish that was popular in central and South Asia. But it also became really popular in Soviet Union times, and we have this in Latvia all the time. This is a perfect recipe for Ligo ( Midsummer Latvian Holiday) coming up! Here is a very simple chicken shashlik recipe.
Shashlik
Ingredients
4 lb boneless pork shoulder
2-3 kiwi
4-5 onions
1 tbsp black pepper
1 tbsp salt
Blend one onion with kiwis, salt and pepper. Add sliced onions to the cubes of meat and press with hands, to get onion juices out. Add kiwi mixture and marinade 30-40 minutes. NO MORE!!!
Cook on direct MEDIUM heat until done, check with knife. Do not overcook it! Enjoy ????
