How To Make Lamb Rogan Josh | Ep 581
700g diced lamb leg (mutton can be used)
4 heaped tbsp tomato paste
1/2 tsp ground cardamom
1 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp black pepper
1 tsp ground cumin
1 tsp ground turmeric
1 tsp ground coriander
2 tsp sweet paprika
1/2 tsp cayenne pepper
2 tsp garam masala
1 brown onion, finely diced
4 bay leaves
4 cloves
1 cinnamon stick
3-4 tbsp oil
3 crushed garlic cloves
1 tsp salt
1.5-2 cups water, extra if required
1/2 cup plain yoghurt

INGREDIENTS:
Lamb Curry Cut= 1 kg
Mustard Oil= 1 cup
Bay Leaf= 2
Green Cardamom= 7 no
Black Pepper= 1 tsp
Black Cardamom= 4 no
Cloves= 7 no
Cinnamon Stick= 4
Onion= 600 gm
Salt= 1 tbsp
Ginger Garlic Paste= 3 tbsp
Coriander Powder= 2 tbsp
Garam Masala= 1 tbsp
Cumin Powder= 1 tbsp
Kashmiri Chilli Powder= 2 tbsp
Turmeric Powder= 2 pinch
Tomato Puree= 1 cup
Water As For Needed
Curd= 1/2 cup
Saffron= 2 pinch
Kashuri Methi Powder= 1/2 tsp
Dry Ginger Powder= 1/2 tsp
Green Cardamom Powder= 1/4 tsp

Recipe in English:
Ingredients:
-Mutton 1 kg
-Namak (Salt) 1 tsp
-Badi elaichi (Black cardamom) 2
-Hari elaichi (Green cardamom) 3-4
-Saunf (Fennel seeds) 2 tbs
-Laung (Cloves) 6-8
-Dahi (Yogurt) Drained ½ cup
-Kashmiri lal mirch powder (Kashmiri red chili powder) 1 tbs
-Adrak powder (Ginger powder) 1 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Sarson ka tail (Mustard oil) ½ Cup or as desired
-Darchini (Cinnamon sticks) 2
-Tez paat (Bay leaves) 2
-Pani (Water) 2-3 Cups
-Namak (Salt) as required
-Garam masala powder (Whole spice powder) 1 tsp
-Ghee 1 tbs (Optional)
-Hara dhania (Green coriander)
Directions:
-In mutton,add salt,mix well and marinate for 1-2 hour.
-In spice mixer,add black cardamom,green cardamom,fennel seeds,cloves and coarsely grind spices.
-In yogurt,add kashimiri red chili powder,ginger powder,black pepper powder and 1 tbs ground spices, mix well and set aside.
-In pot,add mustard oil,cinnamon sticks,bay leaves and marinated mutton,mix well for 10-12 minutes.
-Add remaining ground spices and mix well.
-Gradually add spiced yogurt and mix well on low flame.
-Add remaining spiced yogurt and mix well for 10-15 minutes.
-Add water,cover and cook for 1 hour or until meat is tender.
-Adjust salt in the gravy,add whole spice powder and ghee,cover and let it simmer for 4-5 minutes.
-Garnish with green coriander.

-Mutton mein namak dal ker ache tarhan mix karein aur 1-2 hour kliya marinate ker lein.
-Spice mixer mein badi elaichi,hari elaichi,saunf aur laung dal ker grind ker lein.
-Dahi mein kashmiri lal mirch powder,adrak powder,kali mirch powder aur 1 tbs ground spices dal ker ache tarhan mix karein aur side pee rakh dein.
-Pot mein sarson ka tail,darchini,tez paat aur marinated mutton dal ker 10-12 minute kliya mix ker lein.
-Baqi bacha huway ground spices dal ker ache tarhan mix ker lein.
-Thora thora ker ka spiced dahi dal ker halki ancch per mix kertay jayein.
-Baqi bache hoye spiced dahi dal ker 10-15 minute kliya mix ker lein.
-Pani shamil karein,dhak ker 1 hour ya gosht gul janay tak paka lein.
-Agar zaroorat ho tou gravy mein namak dal dein,garam masala powder aur ghee dal ker dhak ker 4-5 minute kliya dum per rakh dein.
-Hara dhania sa garnish karein.

Ingredients:
MUSTARD OIL | सरसों का तेल 1/3 CUP
WHOLE SPICES
BAY LEAF | तेज पत्ता 2 NOS.
CINNAMON | दालचीनी 2 INCH
GREEN CARDAMOM | हरी इलायची 5 NOS.
BLACK CARDAMOM | बड़ी इलायची 2 NOS. (CRUSHED)
CLOVES | लौंग 4 NOS.
JAVITRI | जावित्री 1 NO.
NUTMEG | जायफल A SMALL PIECE
MUTTON | मटन 1 KG
CURD | दही 3/4 CUP
POWDERED SPICES
FENNEL SEED POWDER | सौंफ का पाउडर 2 TSP
ASAFOETIDA | हींग 1 TSP
GINGER POWDER | सौंठ पाउडर 1 TBSP
SAFFRON | केसर A FEW STRANDS (OPTIONAL)
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 3 TBSP
SPICY RED | तीखी लाल मिर्च पाउडर 1 TSP (OPTIONAL)
CUMIN POWDER | जीरा पाउडर 1 TSP
GARAM MASALA | गरम मसाला 1/4 TSP
SALT | नमक TO TASTE
HOT WATER | गरम पानी AS REQUIRED
RATAN JOT | रतन जोत 1 PIECES
GHEE | घी 3 TBSP
Method:
Set a kadhai over high heat & add the mustard oil, heat the oil over high flame until it reaches its smoking point, then switch off the flame & let the oil cool down slightly.
Further add all the whole spices along with the mutton, stir well & cook the mutton over high flame for 7-8 minutes.
Once the mutton gets seared in a separate bowl add the curd along with all the powdered spices & whisk it well, add then whisked curd mixture to the mutton with salt & stir well, cook over medium high flame until the curd & the spices are cook & the oil separates.
Add hot water once the oil separates, make sure you don’t add a lot of water, the water should barely cover the mutton.
Stir well & then cover the kadhai, now cook the mutton over low flame until itsfully cooked, the time taken will depend upon the quality of the mutton, you can open the lid at long intervals to stir the mutton & check the doneness.
Once the mutton is cooked taste & adjust the salt if required.
Then set a small pan over high heat & add ghee, once the ghee gets hot, lower the flame & add ratan jot, stir well & cook it with the ghee for 2-3 minutes.
Further strain & add the ghee over the mutton & mix well.
Your Mutton Rogan Josh is ready, serve with rotis & rice.
