How To make Roasted Red Pepper Sauce
1 Jar roasted red peppers
(probably about 12 ounces) Or roast your own. 1 Handful basil
1/2 Handful italian parsley
4 Heads of garlic-- make that
4 Cloves for normal people
&^) 1/2 c Stock (if necessary to
Thin) Process the above in a food processor until smooth. Toss with 1 pound cooked pasta of your choice and serve. If you refrigerate it first, be sure to get it to room temperature before tossing. This is Dillon! I was recently asked what would make a good substitute for tomatoes, and I could not think of a good answer. Then one of our fellow Well Your Worldlings emailed me and suggested I make a red pepper marinara! Wow, this was delicious, so sweet and rich, and easy to throw together! I made it with spaghetti and tossed on some lightly steamed zucchini! Hope you enjoy the video!

Creamy Roasted Red Pepper Pasta

CREAMY ROASTED RED PEPPER PASTA | Serves 4
????INGREDIENTS????
16oz / 460g Jar of Roasted Red Peppers
12oz / 350g Long Cut Pasta (here I use Linguine)
1 cup / 250ml cup Heavy/Double Cream
1 tbsp Butter
1 medium-large White Onion, diced
2 small cloves of Garlic, minced
1/2 cup / 50g cup (50g) Parmesan, finely grated (save some for serving)
1 tbsp Fresh Parsley, plus extra to serve
1/2 tsp Smoked Paprika
Salt & Black Pepper, to taste
Chilli Flakes, to preference (optional)
????METHOD????
Pop your pasta in salted boiling water and cook until al dente.
Meanwhile, melt your butter in a saucepan and fry your onions until they soften. Add your garlic and fry for a minute or so longer, then place in a blender with your roasted red peppers. Pulse to a smooth consistency.
Pour back into the pan and keep on a simmer. Add in your cream and stir until completely blended, then add your parmesan, parsley, smoked paprika and seasoning to taste.
Drain pasta and toss through your sauce until completely coated. Serve with extra parmesan and parsley!

The Roasted Pepper Condiment everyone should have in their fridge
I haven't been able to keep these roasted peppers in my fridge because I keep eating them too fast. Like pickled onions, it's one of those things you can throw on anything, except you can also use them to create new things.
