4 c Vegetable stock
1 Onion, chopped
4 Cloves garlic, chopped
1 1/4 c Arborio rice
2 Carrots, chopped
2 Celery sticks, chopped
5 oz Frozen spinach, chopped
5 oz Frozen peas
5 oz Frozen
Recipe risotto soup
Recipe - risotto soup
INGREDIENTS:
-1 tablespoon olive oil
●2 cups chopped onions
●2 teaspoons grated fresh lemon rind
●3/4 cup arborio rice
●3 (14 ounce) cans chicken broth or 5 1/2 cups chicken stock
●1 lb asparagus , cut into 1 inch slices
●2 cups fresh spinach , chopped
●1/4 teaspoon grated nutmeg
●2 ounces freshly grated parmesan cheese
RISOTTO SOUP by Jamie Oliver
In pot cook
- 2 celery sticks
- 1/2 leek
- 1 lemon zest
- 2 cups vegetable broth
- 100g basmati rice
- Fresh pepper
- Black Salt
- Keep adding water as needed
On oven dish
- 1/2 leek
- Chopped hazelnuts
- Shredded parmesan
- Some olive oil
- Cook in oven until hazelnut are golden
In blender
- Fill with fresh spinach
- Squeeze the lemon
- 2 cups hot water
- Blend
- Fill again with fresh spinach
- Blend again
When rice is almost done in pot add the spinach mixture, mix, cover and keep cooking until rice is done
Serve the risotto soup and add the hazelnut mixture on top

How to Make CREAMY MUSHROOM RISOTTO Like an Italian
My mushroom risotto recipe is a no-fail way to master the creamiest risotto you will ever taste – minus the cream of course! Using wild porcini mushrooms, fresh parsley and a sprinkle of parmigiano cheese you barley need any ingredients to recreate this Northern Italian dish in your own kitchen…and wait until you taste it! Trust me, it’s not hard and once you realise that you’ll never order it out again! Try it with your own favourite ingredients and let me know what you choose…

INGREDIENTS:
½ brown onion (chopped into small pieces)
Fresh parsley chopped
Extra virgin olive oil
400g/14oz porcini mushrooms cut into chunky pieces (or your choice of veg/protein)
300g/10.5oz carnaroli rice
½ glass white wine
50g/1.7oz butter
50g/1.7oz parmigiano regianno cheese (grated)
1L - 4cups vegetable stock
Salt

If you love Risotto, this recipe is for you! Our Chef gave it an Indian twist by replacing the Arboria Rice with Jeera Samba Rice ! Much easier & affordable

Ingredients :
Jeera Samba Rice (unwashed) - 1 Cup
Mushroom - 200 g
Salt - 1 tsp
Garlic - 5 cloves
Onion - 1 medium sized
Coriander leaves - For garnish
Green Onions - For garnish
Thyme - ¼ tsp
Rosemary - 1 pinch
Oregano - ¼ tsp
Water -1 litre
Milk - 200 ml
Butter - 75 grams
Processed cheese - 1 cube
Instructions:
1. In a pan melt the butter and add the herbs, garlic and onion, saute for 30 seconds.
2. Add sliced mushroom and salt, and saute until well browned( around 2 minutes)
3. Add the unwashed jeera rice and mix it well, pour the water and milk gradually and whisk vigorously
4. Once all the liquid is absorbed and a pongal like texture is attained, switch off the flame
5. Add the chopped coriander, green onions and processed cheese. Serve hot
