How To make Rice Soup Florentine
1 c Quick cooking brown rice
1/4 ts Sea salt
4 1/2 c Water
1/2 c Chopped leek tops
1 c Thinly sliced scallions
4 ts Minced fresh garlic
5 ts Vegetable bouillon powder
1/2 ts Ground black pepper
1 tb Olive oil
1 c Frozen chopped spinach
-- thawed Cook brown rice with a pinch of salt in 1-1/2 cups of boiling water for 10 minutes. Remove from heat and set aside. In a large saucepan, saute leeks, scallions, garlic, bouillon, remaining salt and pepper in oil until vegetables are soft, about 10 minutes. Add spinach, cooked rice (and any water not absorbed by rice) and remaining 3 cups water. Heat through and serve hot.

Meals in a jar are a wonderful item for your prepper pantry. They contain a complete meal, require only water to be added, and cook up quickly for a warm, hearty, healthy meal. This Chicken Florentine rice bake takes advantage of two items that are on sale this month, February 2022. Both the freeze-dried grilled chicken dices and the freeze-dried chopped spinach are on sale. You can check out the current monthly specials here:
The spinach is a favorite around our home. Mr. Wicked Prepared balks when I add fresh spinach to a dish, but he loved this dish with the freeze-dried spinach and said it’s his favorite meal in a jar that I’ve made thus far. The chopped spinach is also a great way to sneak a little extra nutrition into any food you cook. Try it in a meatloaf! You can powder the spinach (or any other freeze-dried fruit or veggie) if your kids balk at the green bits! Here is the recipe and below it are links to the ingredients.
Chicken Florentine Rice Bake
1 ¼ C. Instant White Rice
½ c. Freeze-dried Spinach
1 c. Freeze-dried Chicken Dices
2 Tbsp. Freeze-dried chopped onion
1 tsp. Chef's Choice Seasoning
¼ c. Thrive Life Veloute Sauce Mix
¼ c. Thrive Life Bechamel Sauce Mix
¼ c. Freeze-dried Sliced mushrooms
⅓ c. Freeze-dried Parmesan Cheese
Layer all ingredients in order listed in a wide mouth quart mason jar. If storing longer than a few months, seal with an oxygen absorber.
To prepare and serve, preheat oven to 350 degrees. Empty jar contents into an 8x8 baking dish that has been sprayed with cooking spray. Add 3-3 ¼ cups cold water and mix until all ingredients are blended. Place dish in preheated oven. Bake for 30 minutes, stirring contents after 15 minutes. Now your dish is ready to enjoy!

If I’m being honest, spinach is not my first choice in vegetables. (Unless we’re talking about my mom’s spinach dip, that is.) But since my family does a CSA (Community Supported Agriculture) and we receive a weekly box of whatever is locally in season, we happen to find ourselves with an awful lot of spinach during certain parts of the year. Since I cannot subsist entirely on spinach dip, I’m often trying to think of creative ways to use it and this Creamy Chicken and Florentine Artichoke Casserole is one of my very favorite ways I’ve come across. Creamy and satisfying, it’s as much about the sauce as it is about the spinach and it’s as family-friendly as it is filling.

Garlic Soup Italian style with crispy croutons
I know what you’re thinking, two heads of garlic, are you crazy! You can relax as the slow cooking of the garlic will dissipate the pungent flavor and leave a pleasing smooth note. This soup really has to be served with croutons or a slice of bruschetta, plus some coarsely chopped parsley for that freshness. A simple soup with amazing flavor and fantastic if you have a cold!
