Garlic Roasted Potatoes

Ingredients
3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley
Directions
Preheat the oven to 400 degrees F.
Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

5 Star Roasted Potatoes ❤️
These perfectly roasted potatoes are crispy on the outside and soft and fluffy on the inside, and they are by far the best out there. I par boil them first for about 12 minutes, then I roast them because they will take less time and because they won’t be dry and tough. I season them with lemon pepper, olive oil and seasoned salt first then I roast them for about 28 minutes flipping once, then I toss them with olive oil, freshly minced garlic and finely chopped rosemary and roast them for the last 2 minutes this way they will be crunchy from the outside and soft and fluffy from the inside. Don’t let anyone tell you the garlic won’t bun if roasted longer, because it will. These are delicious as a side dish anytime of the year, and also perfect when you want to switch from mashed potatoes. I hope you give them a try. ❤️

5 medium garlic cloves (minced)

The BEST Bacon Ranch Cheese Oven Roasted Red Potatoes
Ingredients:
3 lbs red potatoes, cut into cubes
1 packet Ranch seasoning
3 tbsp olive oil (to coat potatoes...more if you need it!)
2 cups cheddar cheese
7 strips of bacon, cooked and cut up
Directions:
1. Preheat oven to 400 degrees.
2. Combine potatoes, ranch seasoning and olive oil in a large bowl. Stir to completely coat the potatoes fully.
3. Place on foil paper lined baking sheet in one layer.
4. Cover with foil and place in oven for 25 - 30 minutes.
5. Remove from oven and check potatoes. You should be able to put a fork through the potatoes with them being mushy.
6. Sprinkle cheese and bacon on top of the potatoes and return to oven uncovered for an addition 5 - 7 minutes until cheese is melted.
7. Remove from oven and ENJOY!

Loaded Red Potato Casserole
Cheesy mashed red potato casserole topped with crispy bacon.
Ingredients:
2 pounds red potatoes, halved
1/4 cup butter
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
INSTRUCTIONS
Preheat oven to 350 F. Place red potatoes into a saucepan over medium heat, cover with water, let simmer until fork tender. Drain and mash potatoes with butter, sour cream, salt, and pepper.
Spread potatoes into a greased baking dish. Top with cheese and bacon. Bake for 20-25 minutes.

8 Russet Potatoes
Olive oil for drizzzle
1 1/4 c sour cream
4 Tbsp unsalted butter (softened)
4 oz cream cheese (softened)
1 Tbsp minced garlic
1/2 c green onions diced
1 lb bacon (diced & fried)
2 c sharp cheddar (shredded)
1 1/2 Tsp salt
1/2 Tsp ground black pepper
- Bake potatoes for 45 min on 400f (flip half way)
- Let potatoes cool for 10 min. Then chop into 1 Inch cubes. Do not mash. However, some potatoes may mash while stirring In the other Ingredients. That’s okay Because It will make the recipe more creamy.
- Bake casserole for 30 min covered on 350f then 10 min uncovered
- Taste best right out of the oven. Not the best for left overs but still taste delicious ????

Loaded Baked Potato Casserole
Easy and delicious loaded baked potato casserole! This dish can also be served cold as a salad. Simply skip the baking step at the end.
***Ingredients***
1.5 lbs. baby red potatoes – skin left on and cut in 1/4 pieces
1 Tbs. olive oil
½ tsp. salt
½ tsp. ground black pepper
½ cup mayonnaise
1 cups sour cream
1 cups cheddar cheese – shredded – reserve ½ cup for topping
4 green onions – sliced thin – reserve some for topping
½ lb. bacon and a little for the top
***Instructions***
-Preheat oven to 450 degrees
-In a large bowl, toss potatoes with olive oil, ½ tsp. of salt and pepper.
-Line a baking sheet with parchment paper. Place potatoes on baking sheet in a single layer. Cook for about 30 minutes or until lightly browned.
-While the potatoes are in the oven, cook the bacon until crisp. Chop or crumble into bite size pieces.
-In a large bowl, combine the potatoes, mayonnaise/sour cream mixture, ½ cup of cheddar cheese, most of the green onions and the bacon. Toss to combine. Season to taste with additional salt and pepper.
-Pour into baking dish. Sprinkle top with reserved ½ cup of cheese, some crumbled bacon and green onions.
-Place in preheated oven at 350 degrees for about 15 minutes or until cheese melts. Serve hot.
