How To make Red Beet Chocolate Cake
1 3/4 c Flour; Unbleached, Sifted
1 1/2 t Baking Soda
1/2 t Salt
1 1/2 c Sugar
3 ea Eggs; Large
1 c Vegetable Oil
1 1/2 c Beets; Pureed
2 oz Unsweetened Chocolate; *
1 t Vanilla Extract
1 x Confectioners' Sugar; Sifted
* Melt and cool the 2 1-oz squares of baking chocolate. ++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ Sift together the flour, baking soda and salt; set aside. Combine sugar, eggs, and oil in a mixing bowl. Beat with an electric mixer set at medium speed for 2 minutes. Beat in the beets, cooled chocolate, and vanilla. Gradually add dry ingredients, beating well after each addition. Pour into greased 13 x 9 x 2-inch baking pan. Bake in a preheated 350 degree F. oven for 25 minutes or until cake tests done. Cool in pan on rack. Cover and let stand overnight to improve flavor. Sprinkle with confectioners' sugar. NOTE: This is similar to a recipe that I had from one of the local cooking shows that was sent out to the listeners when the Red food coloring was banned. While I have not tried this recipe, I did make the other one and it was good. But the other recipe is long gone.

Makes two 8-inch round cakes
Chocolate Beet Blackout Cake
3 small beets (8 ounces), roasted, or one 14.5-ounce can beets, drained well
3 large eggs
2 teaspoons vanilla extract
2¼ cups all-purpose flour
2 cups packed dark brown sugar
¾ cup unsweetened cocoa powder
1½ teaspoons baking soda
1½ teaspoons baking powder
½ teaspoon kosher salt
1 cup canola or avocado oil
To Make the Cake:
1. Preheat the oven to 350°F. Spray two 8-inch cake pans with cooking oil spray, line with parchment paper, then spray the parchment paper with cooking oil spray as well (when cake sticks to the pan, it’s the worst!); set aside.
2. Meanwhile, place the roasted beets, eggs, and vanilla in the bowl of a food processor or blender and blend until very smooth. In a large bowl, whisk together the flour, brown sugar, cocoa powder, baking soda, baking powder, and salt. Add the beet mixture and oil to the bowl with the flour mixture and stir until just combined, then stir in ½ cup of boiling water until the mixture is smooth.
3. Divide the batter between the two prepared pans and bake, rotating the cakes once halfway through the baking time, until the cakes are puffed and a toothpick or knife inserted into the center of the cakes comes out clean—35 to 40 minutes. Allow the cakes to cool for 20 minutes before removing them from the pans, then transfer them to a cooling rack to cool completely.

For Cake
Fresh beetroots- 2.5 nos small/ to make 1/2 cup beetroot puree
Whole Milk - 1/4 cup + 2 tbsps
Vinegar- 1/2 tsp+ 1/2 tbsp
Maida- 1.25 cups
Baking powder - 1 tsp
Cocoa powder - 1.5 tbsps
Vanilla essence - 1/2 tbsp
Lemon juice extract - 1 tbsp + 1/2 tsp
Granulated Sugar -1 cup
Vegetable oil - 1/4 cup
Soft butter -1/4 cup
Eggs- 2 small
For frosting
Cream cheese - 1.25 cups
Powdered Sugar - 1/4 cup + 2 tbsps
cold whipping cream - 1/2 cup
Red gel food colour (optional)
