Below are the ingredients and instructions.
INGREDIENTS
- 1 Cup Old-Fashioned Oats (I did half cup Quick, half cup Old Fashioned)
- 1/3 Cup Almond Meal (or Whole Wheat Flour)
- 1/4 Cup Coconut Sugar (or Packed Brown Sugar)
- 1 1/2 Teaspoon Ground Cinnamon
- 1/4 Teaspoon Salt
- 1/4 Cup Coconut Oil, Melted
- 1/4 Cup Nut Butter (I used Peanut Butter)
- 1/4 Cup Honey
- 2 Teaspoons Pure Vanilla Extract
- 3/4 Cup Raisins
- Optional: 3/4 Chopped Nuts
INSTRUCTIONS
Preheat oven to 325 degrees Fahrenheit. Line a square baking pan with parchment paper, leaving overhang to remove bars easily once cooled (8x8 if you have it). Set lined dish aside. Combine dry ingredients in a medium bowl, give a light mix, then add wet ingredients. Mix all ingredients with a wooden spoon until combined. Transfer mixed to parchment lined baking dish. Make sure to pack down ingredients well, I used a metal spoon to smooth it out easily. You want everything very tightly packed together. Bake for 25-30 minutes or until top and edges appear golden brown. Remove baking dish from oven and place on cooling rack for 1 hour, then transfer to fridge to cool for at least one more hour. Do not rush the cooling, as this will allow the bars to set right when you cut them. Remove the oatmeal bar from the baking dish using the parchment paper. Cut into desired bar sizes. Individually wrap in plastic wrap or place in Tupperware. Enjoy!
