How To make Quick & Easy Frog's Eye Salad
Ingredients

ronzoni acini pepe, uncooked

each
mandarin oranges, 11 oz. cans, drained

pineapple chunks, in juice, undrained

cup
milk
3 1/2
cup
whipped topping, frozen, thawed, divided
1/4
cup
sugar
1
each
pudding & pie filling mix, instant, vanilla
8
oz
pineapple, crushed
3
cup
marshmallows, miniature
1/2
cup
coconut, flaked
1
maraschino cherries
Directions:
Cook pasta according to package directions; drain. Rinse with cold water to cool quickly; drain well. Drain juice from pineapple chunks, reserving 1/4 cup.
In large bowl, add reserved juice, milk, sugar and pudding mix; beat with whisk or electric mixer until well blended, about 1 to 2 minutes. Add pasta to pudding mixture; stir gently. Let stand 10 minutes. Add crushed pineapple and chunks, oranges, 2 cups whipped topping, marshmallows and coconut; mix gently and thoroughly. Cover; refrigerate until cold. Top with remaining whipping topping. Garnish with cherries.
12 servings (about 1 cup each).

Creamy Green Pea Salad with Bacon
INGREDIENTS
2 pounds peas (thawed)
1/2 cup red onion (diced)
1 1/2 cup cheddar cheese (cubed)
8 slices bacon (cooked and chopped)
3 Tablespoons parsley (chopped)
1/2 cup sour cream
3 Tablespoons mayonnaise
1 Tablespoon cider vinegar
1 Tablespoon sugar
Salt and pepper to taste
INSTRUCTIONS
1. In a large bowl add the peas, red onion,
cheddar cheese, bacon and parsley.
2. In a small bowl whisk together sour cream,
mayonnaise, cider vinegar, and sugar.
3. Pour the creamy mixture in the large bowl over the
peas. Toss until the peas are fully coated. Chill for 30
minutes before serving. Serve and enjoy! ????

Frog Eye Salad
INGREDIENTS
1 1/4 Cup Acini Di Pepe (small round pasta)
1 tsp salt, for cooking water
2 (14oz) cans mandarin oranges, drained
1 (20oz) can pineapple tidbits. drained (save juice)
1 small (3.4oz) box instant vanilla pudding
1 1/2 cups milk (or combination or milk & pineapple juice from the tidbits)
2 cups whipped topping (Cool Whip)
3 cups mini marshmallows
1/2 cup sweetened coconut flakes
INSTRUCTIONS
Cook acini di pepe according to package directions in salted water (1 tsp). Drain and rinse with cold water in a tiny mesh strainer until pasta is cool to the touch, set aside. Drain cans of fruit, saving the pineapple juice. In a large bowl, combine the dry pudding mix with milk or a combination of milk and reserved pineapple juice (for a sweeter salad) to equal 1½ cups liquid. Whisk until combined. Place in the freezer or fridge
to firm up pudding: about 5-10 minutes.
Once pudding is firm, fold in the whipped topping. Add the cooked pasta, fruit, marshmallows and coconut. Fold gently. Cover and refrigerate for 1-2 hours to soak up all the flavors and give it a fluffy texture. Serve chilled. Store leftovers in the refrigerator. ????

Holiday Favorite Frog Eye Salad
It may sound a little creepy, but it's sweet and fruity. The Acini de Pepe (pasta) give it a unique texture. Sure to please the kids!
You'll need
1 12 box Acini de Pepe (pasta)
1 can pineapple tidbits
2 cans mandarin oranges
lemon juice
salt
vanilla
cornstarch
sugar OR sucralose powder
1 12 oz tub of whipped topping
8 oz mini marshmellows
Optional: Pomegranate arils, dried cranberries, bananas, strawberries, grapes as desired.

FROG'S EYE SALAD W/ LOGAN WELL S- THE JUNCTION This is an easy pasta fruit salad that is so delicious! You can make it with other small pasta, but we like to use Ancini pasta, which is the small round pasta like they use in wedding soup.....My mom used to make this for holiday dinners as a side dish, and called it Frog's Eye Salad, because of the little round pasta. Would make a great dish for a kid's Halloween party as the name kind of freaks them out a bit, but once they taste it, they LOVE it. Great for a crowd! Best made the day before and refrigerated overnight, as it gives the pasta a chance to absorb the pudding type sauce, and makes it more flavorful! Good eats!
