▪️ zest of 1 lemon + 1 orange

▪️ 1 cinnamon stick
▪️ 50g fresh ginger
▪️ 5-6 clove buds
▪️ 1 star anise

▪️ 10g icing sugar
▪️ 10g corn starch

This pumpkin jam recipe is just in time for this season. This wonderful dessert is made from pumpkin we harvested from our own garden. And when the fall season is in full swing, we love trying different pumpkin recipes. This jam is so delicious and its flavour is very versatile. Literally, you can add any flavour to the jam, and this homemade pumpkin jam will absorb and retain anything. This jam recipe is by far one of our best fall recipes we've created. A great pumpkin recipe is such a hit in this pumpkin season, especially when Halloween is on the way. This is a citrus jam recipe as we added other amazing citrus fruits like some orange and a bit of lemon. As mentioned above, because this jam absorbs a vast array of different kinds of flavour, instantly, this easy pumpkin jam will acquire that fresh zesty orange taste. The texture of this pumpkin jam is smooth and quite thick. So, it is nice to slather this yummy pumpkin orange jam on your toast or pancake. You can also use this orange jam as a tart or pie filling, and because the texture is not runny, it works so well as a filling! A unique jam prepared with the goodness of pumpkins to add to your kitchen shelves. Spread it generously on toasted bread slices and enjoy the awesomeness!
PUMPKIN JAM
Ingredients
400 grams red pumpkin, peeled and cut into 1 inch cubes
1 inch cinnamon stick
3-4 green cardamoms
A pinch of salt
1 cup sugar
2 tsps lemon juice
¼ tsp dry ginger powder
Toasted bread slices to serve
Coffee to serve
Method
1. Dry roast cinnamon stick and green cardamoms in a non-stick pan till they are fragrant. Add pumpkin cubes and mix well.
2. Add salt, and sauté on high heat for 2-3 minutes. Add 1 cup water and and mix well. Cover and cook for 12-15 minutes or till pumpkin becomes soft and pulpy. Discard the cinnamon stick and green cardamoms.
3. Take the pan off the heat and allow the pumpkin to cool slightly. Transfer it into a blender jar and blend to a fine paste.
4. Heat sugar and 1 cup water in a non-stick pan. Cook till the sugar melts and the mixture reaches 1 string consistency.
5. Add the blended paste, mix and cook till the mixture thickens. Add lemon juice and dry ginger powder and mix well. Cook for 2 minutes.
6. Take the pan off the heat and allow the jam to cool completely.
7. Store in an air tight container and serve with toasted bread.
