Puliodharai is a spicy, tangy and flavourful rice dish of South India. The taste varies from Tamilnadu to Andhra to Karnataka. Each variation has its own unique taste and flavor. The Iyengar version of Puliodharai is very famous in Tamilnadu.
Puliodharai is served as neivaidyam in temples and homes during festival times (Aadi Perukku and Kanu Pandigai). It is served as prasadam for Devi during Navaratri. It is a long lasting lunch box dish that is taken on road trips.
Puliodharai will last for two days at room temperature. The Pulikacchal will last for 3 to 4 days at room temperature and will last for upto a month in the refrigerator.
ingredients:
raw rice – 1 cup
tamarind - ¼ cup
turmeric - ½ tsp
asafoetida - - ¼ tsp
jaggery - ½ tsp
salt - to taste
curry leaves - one sprig
peanuts - ¼ cup
seasoning:
mustard – 1 tsp
red chilly – 12
urad dal – 2 tbsp
channa dal – 3 tbsp
asafetida – ½ tsp
curry leaves – 2 sprigs
sesame oil – 5 tbsp
to roast and powder:
white sesame seeds – 1 tbsp
coriander seeds – 1 tbsp
channa dal – 1 tsp
urad dal – 1 tsp
fenugreek seeds – ¾ tsp
red chilly – 4
pepper corns - i tsp (optional)
