1 lb Potatoes 1/2 ts Salt 1 c Wholewheat flour Cook the potatoes until tender. Peel them & mash them. This can be done ahead of time, or use leftover potatoes. Add the salt & flour to the potatoes & knead the mixture well. Roll it out thinly on a floured board & cut into rounds or triangles. Bake at 500F for 10 minutes, turning them after 5 minutes. Serve warm with golden syrup or jam.

Tattie scones are my favourite Scottish breakfast item and are essential when it comes to creating a good old fashioned classic Scottish breakfast. I've been experimenting with tattie scones for a while and this is my favourite way to make them. This recipe is so light and fluffy and works really well with runny eggs!

I can't think of anything better for brekkie than a freshly made tattie scone and a few runny eggs! They are so quick to make if you use up leftover mashed potato from a previous meal the night before and you could even make up a batch for the week ahead as they store well when sealed and popped in the fridge. Just put them in the oven the next day for reheating.
I've paired my scones up with some delicious smoked bacon and a runny free range egg with a little sliced fresh tomato on the side but you can go for the full Scottish breakfast with these on the side if you fancy. A full Scottish breakfast would include something along the lines of two fried eggs, haggis slices, black pudding slices, hash browns, good quality sausages, bacon and maybe some beans. A full Scottish is not something I eat very often but it is very delicious and great for a weekend treat mow and again.

Irish Potato Bread/Farls, Tattie Griddle Scones or English Potato Cakes? Recipe and controversy!
Now, far be it from me to commandeer the food culture of another country but I hereby claim potato farls, or tattie scones, for the Queen of England - and they will now be officially forever known as potato cakes. I'm doing this of course due to my massive sense of entitlement as an Englishman as I hold on to the idea that we are still somehow, some kind of major world power.
This is not delusional thinking in any way. But you would have to be deluded to believe that this simple griddle scone isn't an absolutely cracking recipe. So simple and yet so satisfying. So don't worry about its origins. Just make it and then eat it with no sense or admission of guilt.

Potato farls or tattie scones or potato cakes full recipe
400g cooked potato 80g all purpose flour A third of a teaspoon of salt 50g melted butter
Cook on each side in a preheated, lightly floured pan for 5 minutes per side.

Tattie Scones recipe
Potatoes 1Kg = around 20 Tattie scones Butter 80g Flour (Self-Raising) 250g Salt 3/4 Tsp Pepper 1/4 Tsp
Boil your tatties for 20 mins with 1st salt,
Mash your tatties with the butter,
Mix the flour through the mashed tatties,
Roll out to approx 0.5cm,
Use a tea plate as a circle template and cut a circle,
Divide you circle in 4 quadrants,
Fry in a NON-STICK pan with no oil (heat 4 or 5), flip once after quadrant slides around pan easily, (might be able to do in oven using non-stick mats) 1st side 5 Mins 2nd Side 4 mins
Cook as close to the centre of ‘dry’ non-stick pan as possible (almost touching).
