Potato puffs
Recipe in English:
Ingredients:
-Makhan (Butter) 80 gms (1/3 Cup)
-Pani (Water) 1 Cup
-Maida (All-purpose flour) 1 Cup
-Kali mirch powder (Black pepper powder) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Hari mirch (Green chilies) chopped 1 tbs
-Hara dhania (Coriander) chopped 1 tbs
-Anday (Eggs) 3
-Aloo (Potatoes) Boiled & mashed ½ Cup
-Cheddar cheese grated ¾ Cup
-Parmesan cheese ¼ Cup (optional)
-Oil for frying
Directions:
-In wok,add butter and water,bring it to boil and mix well.
-Add all-purpose flour and mix well for 3-4 minutes until dough is formed.
-In bowl,add dough,black pepper powder,salt,green chilies,coriander and egg,mix well.
-Add eggs one at a time, beating well after each addition.
-Add mashed potatoes,cheddar cheese and parmesan cheese,mix well.
-Grease your hands with oil,take a mixture and make a small ball.
-In wok,heat oil and fry on low flame until golden.
-Add this mixture in piping bag and fry on low flame until golden.

-Karhai mein makhan aur pani dal ker ubal lein aur ache tarhan mix ker lein.
-Maida dal ker 3-4 minute kliya ache tarhan mix ker lein yahan tak ka dough bun jaye.
-Bowl mein dough,kali mirch powder,namak,hari mirch,dhania aur anda dal ker ache tarhan mix ker lein.
-Ek,ek ker ka anday daltay jayein aur mix kertay jayein.
-Aloo mashed,cheddar cheese aur parmesan cheese dal ker mix ker lein.
-Haathon ko oil sa grease ker ka mixture ki small ball bana lein.
-Karhai mein oil garam ker ka golden hunay tak halki ancch per fry ker lein.
-Is mixture ko piping bag mein dal dein aur golden hunay tak halki ancch per fry ker lein.

INGREDIENTS:
Potato - Boiled & Mashed (3)
Onion - Chopped (1 Medium Size)
Puff Pastry Sheet (1)
Salt (1 TSP)
Black Pepper (1 TSP)
Red Chili Powder (1/2 TSP)
Green Chili - Chopped (1-2)
Cumin Seeds (1 TSP)
Egg (1)

INSTRUCTIONS:
1. Heat oil in a pan.
2. Add cumin seeds (1 teaspoon) to the hot oil and fry till they stop crackling.
3. Add chopped onion (1 medium size) and sauté for 1 - 2 minutes.
4. Add boiled and mashed potatoes (3), salt (1 teaspoon), black pepper (1 teaspoon), red chilli powder (1/2 teaspoon) and 1-2 chopped green chili (1-2). Mix. and cook for 1 - 2 minutes.
5. Turn off the heat and let the mixture cool completely.
6. Preheat oven to 350 F.
7. Spoon the filling on the pastry and seal the ends of the pastry using a fork.
8. Brush the tops of the closed pastry with an egg wash.
9. Bake for 25 - 30 minutes at 350 F.
10. Serve hot with mint chutney or ketchup.

How to make pommes dauphine: (French potato puffs recipe)
The Pommes dauphine is a very old side dish ( 1900's) made out of a blend of potato mash and choux pastry that is then deep fried to transform into fluffy and crunchy potato puffs. Get the recipe:
Three important points to remember to make sure you get your Pomme Dauphine right:
1- Temperature control if key! from what I tested, an oil temperature of 160 degrees Celcius /320 F should be kept steady at all time.
2- Size matter. do not be tempted to deep fry large amount of dauphine potato dough at any one time as it won't have time to cook fully and will just be uncooked inside and will become overcooked on the outside.
the right size to use is about the size of a wine bottle cork. or the size of a large walnut if using a spoon.
when you start making Dauphine potatoes if may be better to use a pipping bag to be able to easily control how much dough you are putting in the oil.
3- Patience is key. deep frying choux pastry based product always take time to be fully cooked. The average time it takes to cook is about 6 to 7 minutes per Dauphine potato. To make sure it is cooked, you need to wait for the Potato puff to be just about to crack open ( as shown in the video) this is the sign that the potato puff is ready.
