Potato Latkes | Everyday Food with Sarah Carey
Making latkes for Hanukkah always brings back childhood memories for me. It was so fun to watch spoonfuls of shredded potato fry up into crisp, golden-brown potato pancakes. The latke recipe I'm making today has a little twist -- it's gluten-free. Talk about a crowd-pleaser!

**POTATO LATKES RECIPE:
Hanukah starts soon but do know that at the Smitten Kitchen, latkes are never limited to a single season. Crispy, salty potato pancakes are, we think, the best place to rest a fried egg, or even cook extra tiny and finish with a dollop of crème fraîche and caviar or smoked salmon for a little holiday indulgence. You deserve it.

Potato Latkes Recipe | How to Make Potato Fritters
Learn how to make crispy and delicious potato latkes or potato fritters. Also known as potato pancakes.

My favorite kitchen equipment:
Makes about 18 latkes
Ingredients:
1 kg (2.2lbs) potatoes (4-5 medium potatoes)
2 eggs
1 onion
2 tablespoons flour or breadcrumbs
1-2 teaspoons salt to taste
1/2 teaspoon black pepper
Directions:
1. prepare a large bowl with cold water.
2. Peel the potatoes and onion. Grate the potatoes and onion and transfer to the cold water.
3. Drain the liquids and then wrap grated potatoes and onion with cheesecloth or kitchen towel, twist cheesecloth into a pouch and squeeze out excess liquids.
4. Transfer to a large bowl, add salt, pepper, flour and beaten eggs. Mix well.
5. In a large skillet heat oil over medium-high heat. spoon 2-3 tablespoons of potato mixture the hot oil, flatten slightly.
6. Fry 3-4 minutes on each side or until golden brown. Transfer to paper towels to drain and season with salt.
7. Serve with sour cream.

Ultra-Crispy Latkes for Hanukkah (Potato Pancakes)
Potato pancakes/Latkes/whatever you want to call them are the best part of Hanukkah/Chanukah/ however you spell it. These crispy, golden brown, patty/fritters are perfection... served with cold, sweet, bright applesauce or rich, luscious sour cream (or in my case Creme Fraiche.) No matter how you do it, it’s a W. Cook awn! ????????Adam

Potato Pancakes (Latkes)…
Latkes… (makes 8-10 medium latkes)
4 Russet Potatoes, grated (860g)
2 Large Eggs, beaten (110g)
1/ 3 cup All-purpose Flour (60g)
Salt + Pepper TT
*Neutral Oil/Chicken Fat for shallow frying (1/ 2 inch in the pan)
Apple Sauce…
4 medium Apples, peeled and sliced *sweet variety works best (280-350g)
1/ 3 cup Water (78ml)
Pinch of Salt
Creme Fraiche…
1 cup Heavy Cream (236ml)
1 tbsp Cultured Buttermilk (10g)
*TT = to taste
