Today we make great-tasting old-fashioned mashed potato cakes. Don't throw those leftover mashed potatoes out, make some mashed potato cakes! This is a great way to save a dollar!

Cheese Potato Pancakes Recipe
Cheese Potato Pancakes - crispy on the outside while the interior is soft and deliciously flavored, great as a side dish or simply as a snack.

Ingredients
Makes about 15 pancakes
2 pounds (900g) potatoes, peeled and grated
1/2 cup (50g) Cheddar cheese
1/2 cup (50g) Parmesan cheese
3 green onions, chopped
1/2 tsp (2g) garlic powder
1/4 cup (30g) all-purpose flour
2 eggs, beaten
1 tsp (5g) salt
Freshly ground black pepper
1/4 cup (50g) oil, for frying
Dipping sauce
1/2 cup (120g) sour cream
1 tbsp (20g) chili garlic sauce
1. Use the large holes of the grater to grate cheese and potatoes.
2. Transfer the potatoes into a kitchen towel and squeeze as much liquid as you possible can.
3. Place the potatoes into a large bowl. Add cheeses, onion, garlic powder, flour, salt, pepper and eggs. Stir to combine.
4. Heat oil over medium high heat. Use an ice cream scoop to take equal amounts of potato mixture and add to the pan. Use the back of a spoon to flatten the patties. Cook about 3 or 4 patties at a time.
5. Cook until browned about 4 minutes per side.
6. Repeat with remaining potato mixture.
7. Transfer the pancakes to a plate lined with paper towel to remove excess oil.
8. Prepare the dipping sauce by mixing sour cream with chili garlic sauce.
9. Serve the potato pancakes while still warm.

Potato Latkes

Ingredients
2 large baking potatoes
1 extra-large egg, whisked
3 tablespoons all-purpose flour
1 1/4 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons clarified butter
Directions
Peel the potatoes and grate them on a box grater. Wrap the grated potatoes in a kitchen towel and squeeze out as much liquid as possible. Combine the potatoes in a bowl with the egg, flour, salt and pepper. Mix well.
Melt the clarified butter in a large saute pan over medium heat. Place a tablespoon of the potato mixture into the sizzling butter and cook for 2 minutes. Turn the pancakes over and cook for another 2 minutes, or until crisp on the outside and golden brown. Serve the pancakes hot from the skillet.
Cook's Note
To make the clarified butter, slowly melt 4 tablespoons butter in a small saucepan. Set it aside until the milk solids settle. Spoon off any solids that rise, then carefully pour off the golden liquid, discarding the milky part in the bottom of the pan.

Griddle Cakes - 1916 Nyal Cookbook | Victorian & Edwardian Pancake Recipe
1916 Griddle Cakes Recipe from the Nyal Cookbook
1 ¼ cups flour
¼ teaspoonful salt
2 teaspoonfuls baking powder
1 cup thick sour milk
¼ teaspoonful baking soda
1 egg
2 tablespoonfuls melted butter
Sift together the flour, salt, and baking powder; stir the soda into the milk; add the egg, beaten very light, and the melted butter, and stir into the dry ingredients. If the sour milk be rich and creamy, the butter may be omitted. Set by spoonfuls on a hot, well oiled griddle; when bubbles appear throughout and the cake is well browned on the bottom, turn to brown the other side. Do not turn the cakes but once!
1916 Sour Cream Griddle Cakes from the Nyal Cookbook
1 cup sour cream or buttermilk
1/2 teaspoonful (scant) baking soda
2 egg yolks
1 cup flour
1 level teaspoonful baking powder
1/2 teaspoonful salt
2 egg whites, beaten dry
Sour Cream Waffles
Same as above, with the addition of two or three tablespoonfuls of melted butter.

Best Leftover Mashed Potato Cakes!! On the Blackstone 36 Griddle
Do you have left over mashed potatoes in your fridge? You know, those ones in the back corner. Yeah, those. Get them out, throw some flour, cheese, onion, eggs, salt, and pepper and cook them!
This is how I do potato cakes with left over mashed potatoes!
2 cups left over mashed potatoes
2 eggs
1/4 cup flour
1/4 cup onion
2-3 chives cut
1/4 cup cheddar cheese (you can use your favorite)
Mix ingredients well, and fry in a pan or Blackstone about 3-4 mins a side in some bacon grease. Serve with some sour cream or your favorite condiment.
