Ham & Potato Casserole!!!! Very Filling!!!
Peel 4 Russet potatoes and then cut into 3/4” pieces. Then add into water in a pretty big pot and bring to a boil. Once boiling, only boil for a few minutes. You want to soften the potatoes but not cook them all the way through. Then drain water from the potatoes and pour them into a greased 9x13 baking dish. Next add two cups of cubed ham and then toss the ingredients together. Then top with one cup of shredded cheese.
Melt 3 Tbsp of butter over medium heat on the stove. Once the butter is melted, add half of a chopped medium onion and 2 Tbsp minced garlic. Once the onion has softened, add 3/4 Tsp salt, 1/2 Tsp black pepper, 1/2 Tsp paprika, 1/2 Tsp ground mustard and 1 Tsp of parsley. Then add 2 cups of milk followed by 3 Tbsp of flour. Stir the flour as you are adding it into the skillet. Once the gravy has reached the desired consistency, remove from heat.
Pour the sauce over the ham and potatoes and again gently toss the ingredients together. Bake covered at 375 degrees for 30 minutes. Pull from oven and remove the aluminum foil and pour another cup of shredded cheese over the mixture. Then toss back in the oven for another 7 minutes or until the cheese is melted and bubbling.
This isn’t the fastest meal to make but a great meal that can be made, frozen and then served later during the week.

ONE-POT HAM & POTATO SOUP Servings: 4-6
INGREDIENTS 2 strips of bacon, cut into 1-inch pieces 1 cup onion, diced 1 cup carrot, diced 1 cup celery, diced 3 tablespoons flour 2 cups cooked ham, cubed 2 potatoes, cubed 1 teaspoon thyme 1 teaspoon black pepper 6 cups chicken broth 2 bay leaves 2 cups heavy cream
PREPARATION In a 6-quart dutch oven, cook bacon over medium-high heat until fat is rendered out and the pieces begin to get crispy. Add onion, carrot, and celery, and cook until just tender, about 3 minutes. Reduce heat to medium and add flour, stirring constantly for 1-2 minutes to avoid lumps. Add ham, potatoes, thyme, and black pepper. Stir to coat the meat and potatoes in the roux/vegetable mix before adding the chicken broth and bay leaves. Cover and bring to a boil. Then reduce heat to medium-low and cook covered for 25-30 minutes. Remove bay leaves and stir in cream. Return to a simmer and serve. Enjoy!
