How to make Claypot Chicken Rice!
Claypot Chicken Rice
Ingredients:
1 cup / 210g thai fragrants rice
260 ml water
450g boneless chicken
1 chinese sausage (sliced thinly)
Marinade :
30g grated ginger
1 tsp Soy sauce
1/8tsp salt
1/3 tsp sesame oil
1/2 tbsp oyster sauce
1/8 tsp white pepper powder
1/2 tbsp shaoxing wine
1/2 tsp sugar
1tsp corn flour
1/2tbsp dark soy sauce
Seasoning:
1 1/2 tbsp soy sauce
1 tsp Oyster sauce
1/2 tbsp fried shallot oil
1/4 tsp sesame oil
Garnishing:
Some chopped spring onion
Some fried shallot
Method:
1.Season the chicken with all the marinade ingredients. Marinade for around 1 hour.
2.Wash rice , soak in water for 1 hour. Drain thoroughly,transfer the rice to claypot, add in 260ml water cover with lid and cook over high heat till boiling , water is almost dried up and small holes start appearing (stir once in a while to prevent stick to the pot)
3.Arrange chicken pieces and sausage on the rice, cover with lid and cook over low heat for 20 minutes. Add in seasonings , and continue cook with low heat for another 5 minutes.
4.Garnish with chopped spring onion and fried shallots, mix thoroughly and serve!

Pho Tutorial: PRO Level Pho broth in one step!
Hey everyone and welcome to my first Pho tutorial. I'm a professional Pho chef by day and although I mainly do Pho reviews I'm starting to get into tutorials and how to videos because my mission on this channel is to help people right around the world cook a better Pho.
In this video we take a look at the traditional parboiled bone method which produces a dull flat Pho broth. Then I show you a simple step to up your Pho game which produces an even more fragrant and better looking Pho broth.
The prerequisite? An oven and some spare time.

Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

What is ASMR?
ASMR stands for Autonomous Sensory Meridian Response. It's a non-scientific word that an everyday person came up with to describe the feeling characterized as a pleasurable tingling sensation felt in the head, scalp, back and other regions of the body in response to visual, auditory, tactile, olfactory, and/or cognitive stimuli, such as crinkling bags, hand movements, whispering, personal attention or watching someone perform a task. It's like goosebumps but much more pleasant and without the uncomfortable chills.
ASMR videos are meant to intentionally induce this sensation in the viewer, often referred to as tingles, but the videos also serve to provide a relaxing, calming and soothing experience for the viewer. Many people who do not experience ASMR still enjoy the videos for their calming and sleepy effect.
