Pork Chop & Baked Apples
This is a great weeknight dinner for kids. I make this a lot during the school year, especially during apple season when we have picked a lot! You can easily double this recipe if you are feeding a bigger crowd.
Makes 6 servings
6 teaspoons brown sugar
3 teaspoons cinnamon, plus more to sprinkle on the apples before baking
6 tablespoons unsalted butter, softened
1.5 pounds Pork Chops thick boneless (about 6 pork chops)
Salt
Pepper
4 Medium Apples
Preheat the oven to 350 degrees F.
In a small bowl, stir together the brown sugar and cinnamon, then combine it with the butter to make a cinnamon sugar butter.
Sprinkle both sides of each pork chop with salt and pepper to season and place on a parchment lined baking sheet.
Prepare the apples to bake alongside the pork chops by coring them, and filling each one with equal amounts of the cinnamon sugar butter.
Place the apples on a separate baking sheet and place in the oven with the pork chops to bake.
Bake the apples and pork chops for about …. The internal temperature of the pork should be 145 degrees F. The apples are done when a butter knife will cut them in half with no resistance.
Transfer the pork chops to individual plates.
Cut each baked apple in half and place two halves on top of each pork chop. Serve hot.

BASIC PAN-SEARED PORK CHOPS
Notes: Just as with beef, it’s better to cook pork bone-in. While the bone won’t add flavor to your meat, it does act as an insulator, and there is less exposed surface area with a bone-in chop, which helps it to retain more moisture as it cooks. For best results, after seasoning the chops, place them on a wire rack set in a rimmed baking sheet, and refrigerate, uncovered, for at least 45 minutes and up to 3 days.
SERVES 4
Four 6- to 8-ounce (180-220g) bone-in pork chops (blade-end or rib), about 1 inch thick, brined if desired (see page 000)
Kosher salt and freshly ground black pepper
1⁄2 cup (170ml) cider vinegar
1⁄2 cup (170ml) apple cider
1⁄2 cup (150g) packed dark brown sugar
Pinch of ground cinnamon, cloves, and/or nutmeg
1 tablespoon (15ml) vegetable oil
3 tablespoons (45g) unsalted butter, divided
2 thyme sprigs (optional)
1 roughly chopped shallot and/or 2 cloves lightly smashed garlic (optional)
1 Granny Smith or other tart apple, peeled, cored, and cut into 1⁄2-inch cubes (about 1 cup)
1. Pat the pork chops dry and season with salt and pepper (see note). Whisk together the vinegar, cider, brown sugar, cinnamon, cloves, and nutmeg (if using). Set aside.
2. Heat the oil in a 12-inch cast-iron or heavy- bottomed stainless steel skillet over high heat until smoking. Carefully add the chops and cook, flipping them frequently, until both sides have developed a light brown crust (if the oil starts to burn or smokes inces- santly, reduce the heat to medium-low), about 5 minutes.
3. Add 1 tablespoon of the butter and the thyme and shallots (if using) and continue to cook, turning the chops frequently, until they are deep brown on both sides and an instant- read thermometer inserted in the center registers 135°F for medium, about 5 minutes longer. Transfer the chops to a platter, and allow to rest while you make the pan sauce.
4. Add the butter and diced apples to the pan, return to medium-high heat, and cook, stirring constantly, until the apples are browned and softened, about 3 minutes. Add the vinegar mixture and reduce until syrupy, about 4 minutes. Season to taste with salt and pepper. Pour the apples and sauce over the chops and serve immediately.

Potatoes
2 lbs red potatoes, diced
1 small bunch fresh thyme
1 1/2 cups heavy cream
3 cloves garlic, smashed
4 Tbsp unsalted butter
3 cloves garlic, minced
1 tsp finely chopped rosemary
Pork Chops
2 apples, sliced
1 small shallot, diced
2 bone-in pork chops
2 Tbsp butter
2 Tbsp brown sugar
1/2 Marsala wine, optional
1 cup Crisp Apple Olipop
1 tsp dijon mustard
Add your diced potatoes to a pot, cover with cold water and boil until fork tender. In a small pot, add heavy cream, thyme and garlic. Bring to a simmer and, turn off the heat, and let infuse for 15 minutes.
Mash your potatoes, until relatively smooth. Then, add your butter and infused cream. Mix well, season to taste with salt and pepper. Keep warm.
Season your pork chops with salt and pepper on both sides. Set aside.
In a pan, over medium high heat add your oil and pork chops. Sear for 4 minutes. Flip and sear for 4 minutes or until 155f internal temperature. Remove and let rest. In the same pan, add your butter. Once melted, add your shallots and garlic. Cook until lightly softened. Then add your sliced apples, rosemary and brown sugar. Cook until lightly caramelized, about 5 minutes. Next add your Marsala wine and cook off the alcohol. Next, add the Crisp Apple Olipop and reduce sauce until thickened.
Add your dijon mustard, season to taste with salt and pepper. Slice your pork chops.
To plate
Add a dollop of mashed potatoes and one of your pork chops. Top with some of your sauce, garish with chive and enjoy!

Fall has arrived and with it brings all those comfort food cravings. When you just can't take it anymore and you need a fall dinner fix and you need one quick, look no further than this easy Pork Chops With Apples recipe!
In this recipe, we'll build flavor, upon flavor, upon FLAVOR! The pork chops pick up a ton of flavor from pan-seared bacon, and the apples pick up on all the savory goodness left behind in the pan from both the chops AND the bacon! Then, in goes the brown sugar along with cinnamon and few other spices to turn those apples into soft, syrupy, cinnamon perfection!
It all comes together on the plate to create the perfect fall dinner for weeknights and/or weekends! It's quick and easy enough for a Monday, but most definitely flavorful enough for entertaining!

Ingredients
2 pounds 3/4” thick center loin chops
3 teaspoons of TAK Seasoning
4 slices thick-cut bacon diced
2 Jazz apples peeled and cut into very thin slices
1/4 cup light brown sugar
1 teaspoon dried sage
1 teaspoon cinnamon
1/2 teaspoon ground ginger
Pinch of allspice
Pinch of Kosher salt
Instructions
Pat chops dry with a paper towel, sprinkle both sides with TAK Seasoning and pat to adhere. Set aside until ready to use.
Have ready a plate lined with a paper towel. In a large saute pan over medium-high heat, fry bacon for 6-8 minutes, stirring occasionally until browned and crispy. Using a slotted spoon, transfer the bacon to the plate and set aside.
Have ready a large plate. Add pork chops to the bacon grease and sear 2-3 minutes on each side, taking care not to overcrowd the pan, and searing in batches if necessary. Once cooked through, transfer the pork chops to the plate and set aside.
Add the sliced apples to the pan and saute 3 minutes, stirring often. Add sugar, sage, ginger, allspice and salt to the apples and stir to combine. Allow to cook, stirring often, until apples have softened, about 2 minutes more.
