PORK CARNITAS for DELICIOUS TACOS STEP BY STEP! ❤
I grew up eating CARNITAS, my uncles and aunts would bring my cousins over to our house while my dad and grandpa made CARNITAS in a big outdoor pot, that's where I learned to make them, I have now mastered the recipe and made it my own, they are delicious especially when seasoned well with herbs and spices, I try my best to explain as much as I can in this video without boring you, please send me questions or comments if you wish, it's a dish worth making.❤
INGREDIENTS:
1 tsp dried thyme
1 tsp pepper (you decide amount)
1 tsp powder cumin
1 Tbsp oregano
1 tsp dried marjoram
3 bay leaves
small bunch fresh thyme (I like fresh and dry mixed)
7 large and medium garlic cloves
1 Tbsp salt dissolved in water
1/2 medium onion
zest and juice of 1 lime
zest and juice of 1 orange
3/4 cup COCA COLA
3/4 cup milk
3/4 cup warm or hot water
3 LBS pork shoulder (cut into 3 inch pieces)
3 cups LARD
In a deep pot melt 3 cups lard (med/high heat)
dissolve 1 tbsp salt in 3/4 cup warm to hot water and set aside
add pieces of meat and sear on each side for about 15 minutes...
add zest and juice of 1 lime and add zest and juice of 1 orange (dump in half orange)
add salted water and stir together
let boil uncovered for 45 minutes to 1 hour till water evaporates (stir and flip meat over every 10 to 15 minutes)
add all spices ,herbs, milk, garlic, cola and stir well (stir meat every 10 to 15 minutes)
cook 1 more hour approximately till golden brown, remove meat only from pot and drip on paper towel lined plate)
shred and
●use caution when making carnitas, lard gets very hot, please keep children away from hot pot.●

RECIPE: PORK CARNITAS FOR TACOS
With my 1 step method you don’t need to fry or brown the meat in a broiler to get the beautiful crispy edges.
3 lbs boneless pork shoulder, cut into 2 “ cubes (1350 gm )
salt and whole peppercorns to taste
1 small ancho chile, soaked and finely chopped
½ tsp. cumin, toasted and ground (2.5 ml)
1 tsp. dried oregano (5 ml)
2 cloves garlic, smashed
1 onion quartered
2 cups chicken stock (500 ml)
5 whole cloves
1 cinnamon stick
5 kumquats, quartered or 1 large juice orange cut into 8 wedges
flour or corn tortillas
Garnish
fresh limes
pico de gallo
guacamole
fresh coriander
Preheat oven to 350 F still or 325 F convection
In a 13x10 roasting pan or round braising pot with lid, toss pork in salt and pepper and sprinkle with spices, onions, garlic, kumquats and pour in the chicken stock . Liquid should not completely cover meat. Cover meat and braise pork in oven at 350 F for 2 ½ to 3 hours total, removing lid or foil after 2 hours , until very tender, turning over with tongs several times to ensure even flavouring. Corners of meat should be exposes and crisp bits will develop. You are looking for a very tender centre with crispy edges.
When ready to serve, remove pork from juices and full apart gently with fork or slice with knife. If using Kumquats, chop some of them with meat.
Serve on tortillas with garnishes.
