1/2 c Whole wheat flour 1/2 c Self-rising flour 1/3 c Buttermilk Makes 8 Additional whole wheat flour Peanut oil or corn oil for deep frying Combine 1/2 cup whole wheat flour and self-rising flour in medium bowl. Mix in buttermilk. Knead dough on lightly floured surface 2 minutes. Cover and let rest 15 minutes. Divide dough into 8 pieces. Roll 1 piece into smooth ball (keep remainder covered with towel). Dust generously with whole wheat flour and roll into 5-inch-diameter circle, dusting with flour to prevent sticking. Cover. Repeat with remaining dough. Pour oil into wok or medium saucepan to depth of 3 inches. Heat to 375 degrees. Add 1 dough round to oil; dough will sink to bottom. When dough starts to rise, gently press in center with back of slotted spoon until bread puffs. Turn and cook until light brown, about 20 seconds. Transfer to paper towels uning slotted spoon. Keep warm while cooking remaining dough. Place on platter and serve immediately. Bon Appetite

Air Fried Puri Recipe in English:
Ingredients: -Chakki ka atta (Whole wheat flour) sifted 2 Cups -Maida (All-purpose flour) sifted ½ Cup -Sooji (Semolina) 2 tbs -Namak (Salt) 1 & ½ tsp or to taste -Bareek cheeni (Cater sugar) 1 tsp -Ghee melted 2 tbs -Water 1 & ½ Cup or as required -Cooking oil for frying
Directions: -In a bowl,add whole wheat flour,all-purpose flour,semolina,salt,caster sugar,melted ghee & mix well until it crumbles. -Gradually add water and knead until dough is formed,cover & let it rest for 15-20 minutes. -Knead dough again until smooth & soft. -Take a small dough (50g),make a ball and roll out with the help of rolling pin. Option # 1: Frying -In a wok,heat cooking oil & fry on medium flame from both sides until golden while frying gently press so that it may puffs up (makes 14). Option # 2: Air Frying -In air fryer machine,place butter paper,rolled dough & grease with oil with the help of the brush. -Air fry at 180 C for 6 minutes. -Serve puri with aloo bhujia & pickle.

Directions: -Bowl mein chakki ka atta,maida,sooji,namak,bareek cheeni aur melted ghee dal dein aur crumble hunay tak ache tarhan mix ker lein. -Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 15-20 minutes kliya rakh dein. -Dough ko smooth aur soft hunay tak dubara ghond lein. -Chota dough (50g) lein,ball bana lein aur rolling pin ki madad sa bail lein. Option # 1: Frying -Karahi mein cooking oil garam karein aur darmiyani ancch per dono sides sa golden hunay tak fry ker lein aur frying kertay hoye gently press kertay rahein tak puri phool jaye (makes 14). Option # 2: Air Frying -Air fryer machine mein butter paper aur rolled dough rakh aur brush ki madad sa oil sa grease ker lein. -180 C per 6 minutes kliya air fry ker lein. -Puri ko aloo bhujiya aur achar ka saath serve karein.
