1/4 ts Salt
1 tb Sugar
1/4 c Butter
1 c Milk; scalded
3 Eggs; unbeaten
Add the butter to the milk and stir until it melts in a saucepan. Add the flour and salt and beat until smooth. Cook, stirring constantly, until the dough leaves the sides of the pan; remove from the stove and blend in the sugar and eggs. Shape into small balls and fry in deep fat until dark brown. Note. This is similar to a cream puff recipe except they are baked. -----

Oliebollen ( Dutch Doughnuts) New Years Treat
If you married a Dutch guy you’ll eventually learn how to make this Oliebollen! This crisp on the outside and soft and chewy inside has become my favorite and every New Years Eve I would always make this not just for my husband mostly for myself????
Oliebollen are traditionally made and enjoyed as a New Years treat in Holland. Fried until golden and served warm dusted with icing sugar they are irresistable! You can’t eat just one for sure!

Oliebollen (Dutch Doughnuts)
Ingredients:
Milk warm 358g (1 1/2 cup)
Active dry yeast 16g (1 Tblspn and 1 tspn)
All purpose flour 530g (3 1/2 cup)
Salt 6g (1 tspn)
Sugar 34g (2 Tblspn)
Vanilla 15g (1 Tblspn)
Golden raisins 134g (1 cup)
Rum for soaking raisins 169g (1cup)
Canola or vegetable oil for frying 5 cups
Orange zest 1/2 orange
Orange juice 1/2 of orange
Powdered sugar 1/4 cup
Note:
Make sure to soak the raisins in rum for a few days or overnight. And make sure the oil is not very hot or it will cook outside and inside will still be soft. You can roll this over powdered sugar or just sprinkle on top I like mine with lots of sugar ????

At the local baker, from a trailer at the hardware store or at home - the modest oliebol (lit. oil ball; also known as Dutch doughnuts) spreads a sweet fragrance throughout the Netherlands from early November all the way into January. There's no December 31st in the Netherlands without an oliebol. Diehard fans will also find them throughout the year at amusement parks or other venues where a few extra calories just don't matter.
With only six ingredients and very little preparation, there's no excuse to not make them at home.
INGREDIENTS:
500 gr (4 cups) flour
500 ml (2 cups + 1 Tbsp) milk
100 gr (1 cup) raisins
100 gr (1 cup) currants
2 1/2 tsp active dry yeast
1 tsp sea salt
