Preserving Tomatoes and Garlic in Olive Oil
Directions:
Cut your harvest of Cherry tomatoes in half. Peel a bulb of garlic and chop into 1/2 pieces. Place Tomatoes and garlic on a sheet pan and generously drizzle with olive oil and salt and pepper. Then, roast in a 400° oven for 30 minutes or until the garlic is carmelized and you can smear it like butter. At that time, remove from the oven and let cool for about 30 minutes. Pour all the ingredients in a container. At this time, you can add crushed red pepper and other herbs or seasonings that you like. Fill the jar with Olive Oil until it is about an inch above the Tomatoes. You want to keep air away from the Tomatoes. Seal with a lid and place in the back of the refrigerator. This will keep for 6 months.
Try using this over cheeses, dry breads or pasta. It's great to even top chicken with this, with a bit of cream and cheese. YUM!
Disclaimer: If you smell an unpleasant Odor or see mold don't eat. just throw out. It is important to keep the Tomatoes covered in oil away from the air when storing
