1.00 tb Butter
1.00 c Cornmeal,white,stone-ground
1.00 ts Salt
2.00 ts Sugar
2.00 c Water,boiling
1.00 c Milk,at room temperature
3.00 Eggs
3.00 tb Butter,melted
1.00 ts Baking powder
1. Place the 1 tablespoon butter in a 2- or 2-1/2-quart nonmetal deep
baking dish and place dish in oven. Set oven temperature to 400'F. 2. In a saucepan combine cornmeal, salt, sugar, and boiling water.
Cook, stirring over low heat, until thick and smooth. Remove from heat and slowly add milk, stirring. Add eggs one at a time, beating well after each addition. Stir in melted butter and baking powder and beat until batter is well blended. 3. Remove heated baking dish from oven and rotate to distribute
butter evenly over bottom and sides. Pour in batter and bake in preheated oven until firm, about 45 minutes.
4. Serve hot from the baking dish.

Betty demonstrates how to make Holiday Table Butter Pecan Spoon Rolls. These are yeast rolls that you do not have to wait on to rise. Also, the addition of butter and pecans makes them festive for your holiday table.
Holiday Table Butter Pecan Spoon Rolls
3 tablespoons butter
½ cup chopped pecans
2 cups warm water
1 package dry yeast
¼ cup sugar
¾ cup vegetable oil
4 cups self-rising flour
cooking oil spray for muffin tins
In a small saucepan, melt 3 tablespoons butter. Add ½ cup chopped pecans. Toast over low heat for 5 to 7 minutes, tending constantly. Drain any excess butter, and set aside to cool completely. In a measuring cup or small bowl, mix 2 cups warm water with 1 package dry yeast. Let sit, until ready to add to roll batter. In a large bowl, place ¼ cup sugar. Add yeast/water mixture. Stir together. Add ¾ cup vegetable oil and mix thoroughly. Stir in 4 cups self-rising flour. Beat with an electric mixer until smooth. Spoon batter into muffin tins that have been sprayed with cooking oil spray, filling two-thirds full. Bake at 400 degrees F for about 12 minutes, or until puffed and golden. Serve immediately with fresh butter. This dough will keep in the refrigerator easily for a week or more, making them really convenient for serving with large dinners. If you prefer to have plain spoon rolls, just leave out the buttered pecans. I hope you enjoy this recipe! --Betty

Old Fashioned Spoonbread made with white corn meal and white loaf bread
Old Fashioned Spoonbread
Ingredients:
8 large slices of white bread
2 cup whole milk
1 cup buttermilk
2 teaspoon baking powder
3 large eggs beaten
1 stick of margarine, melted
3/4 WHITE corn meal, not self rising
1 teaspoon salt
¼ teaspoon white pepper
1 teaspoon light brown sugar
1 teaspoon white sugar
Pot of boiling water
Directions: ( 6 easy steps )
Step 1 Prep work:
Preheat oven to 350 degrees.
Bring a pot of water ( around 3 cups worth ) to a boil and remove from heat.
Grease two 9 inch glass Pyrex pie pan dishes.
Melt butter in microwave and set aside to cool off.
Step 2 bread mixture:
Remove crust off bread and tear your slices into one inch pieces and place in a medium size bowl. Cover with whole milk. Set aside to get soggy.
Step 3 cornmeal mixture:
In a large bowl sift together cornmeal, baking powder, salt, and pepper. Set aside.
Step 4 egg mixture:
In a medium size bowl beat together your eggs, sugars, buttermilk, and cooled melted butter.
Step 5 assembling:
Pour two cups of boiling water over your corn meal mixture. Stir. Quickly fold in your soggy bread mixture and your egg mixture. Stir thoroughly. Divide the contents between your two greased pie dishes.
Step 6 bake:
Place pie dishes in oven to bake for 40 minutes or until top is brown and contents has a firm jiggle. Remove from oven. Scoop large spoonful onto a plate and serve it while warm with a pat of “butter” on top.
This is comfort food at it’s finest. Superior to cornbread or hushpuppies. Goes great with soups or stews.

NEW MEXICAN SPOON BREAD: Easy Recipe for Moist Cornbread made with Hatch Green Chile and Cheese
New Mexican Spoon Bread is one of the most deliciously moist cornbreads you'll ever have. It's made with Hatch Green Chile (which is a staple in New Mexican homes) and cheddar cheese. And we call it spoon bread because it's so moist, you'll literally want to eat it with a spoon! This is one of my absolute favorite family recipes and it's easy to make, too. Read on for the recipe.
New Mexican Spoon Bread
1 can creamed corn
3/4 cup milk
1/3 cup melted butter or shortening
2 eggs, lightly beaten
1 cup cornmeal
1/2 tsp. baking soda
1/2 cup chopped Hatch green chile
1 1/2 cup shredded cheddar cheese
You’ll also need an 11 x 7 inch baking pan or a 9 x 9 square one.
Preheat oven to 350º
Mix all the moist ingredients together in large bowl, in order given. In a separate bowl, mix together dry ingredients. Pour dry ingredients into moist ingredients and mix well to form the batter. Grease baking dish and pour just enough of this batter to form a layer across the bottom of the dish. Place chile on top, forming a layer across the batter. Layer 1 cup of cheese on top of chile, reserving half a cup of cheese for later. Spoon in remaining batter, covering all the chile and cheese. Sprinkle remaining cheese on top and bake in oven for 30 to 40 minutes, until golden.
Let sit for 5-10 minutes before cutting, and serve while still warm.

RECIPE:
1 cup cornmeal, white or yellow
1 cup boiling water
2 cups milk
1 teaspoon salt
2 teaspoon baking powder
3 eggs room temp
2 tablespoon melted unsalted butter
Preheat oven 375
Pour boiling water over corneal mix well let cool one minute, add milk, baking powder, beat eggs add to mixture, mix all well together add butter last. Well grease cast iron skillet, bake 35 minutes or until golden brown.
