How To make Creole Spoon Bread
Ingredients

cornmeal, enriched self rising

shrimp, cooked, coarse chopped
1/3
cup
bell pepper, green, chopped
1/3
cup
parsley, fresh, chopped
1/3
cup
onion, chopped

tablespoon
oil, or vegetable shortening
1/4
teaspoon
hot pepper sauce
4
each
egg, yolks, beaten
4
each
egg, whites
2
tablespoon
butter, or margarine
2
tablespoon
flour, self-rising, enriched
1 1/4
cup
milk
1/2
cup
ketchup
1
tablespoon
worcestershire sauce
Directions:
In large saucepan, heat milk until almost simmering. Stir in cornmeal until smooth. Stir in shrimp, bell pepper, parsley, onion, shortening, and pepper sauce. Bring to a boil over medium heat, cook, stirring constantly, 1 minute longer.
Remove from heat and cool slightly. Stir egg yolks into cornmeal mixture. Beat egg whites until stiff but not dry, fold into cornmeal mixture.
Turn into well-greased 2-quart baking dish and bake in preheated 375 degree oven for 45 to 50 minutes, or until golden brown.
Meanwhile, make sauce. Melt butter in saucepan; blend in flour. Gradually stir in milk and cook over medium heat, stirring constantly, until thickened. Stir in ketchup and worcestershire sauce.
Serve spoon bread with sauce.

Creole Cornbread Ingredients
2 cups Cooked Rice
2 large Eggs, room temperature
1 cup Whole Milk
1 cup Yellow Cornmeal
1/2 cup chopped Onion
1 - 2 tbsp chopped Jalapeno Peppers
1/2 tsp Baking Soda
1 tsp Salt
1/4 cup Canola Oil
1 (14.5 ounces) can Cream-Style Corn
3 cups shredded Cheddar Cheese
**** Note ****
To level this Creole Cornbread up even further add these ingredients:
1 tbsp Creole Seasoning (I strongly suggest Creole Kick)
1 tsp Cumin
Small Shrimp can be added as well
2 - 3 tbsp chopped Jalapenos with seed for that bite!

Jiffy Creole Cornbread Recipe
Jiffy 1 box
1/4 cup of Buttermilk
2 medium or 1 large egg
Extra virgin olive oil robust 1 cap = .5 tsp
1/2 tsp creole seasoning
1/2 tsp slap ya mama (optional)
1/2 tsp cilantro flakes or parsely flakes
1/4 tsp onion powder
1/8 tsp cayenne pepper
1/2 tsp of zatarain's liquid crab boil
EVOO Robust 1 cap
1/2 tbsp lemon juice
1/2 tbsp white vinegar
1/2 can creamed corn
1/2 can Rotel diced tomatoes w/ green chilies
small white onion chopped
9 La Contena Jalapenos slices chopped
1/2 tsp of La Contena Jalapeno juice
Dutch Farms Taco Cheese 2 handfuls
Dutch Farms Mild cheddar cheese 1 handful
1 cup of steamed rice (optional)
Mix well with big spoon
I did not use rice for this recipe, because my stomach can't handle to much of it. I already had rice with the jambalaya. Just do whatever you prefer.
Spray pan or dish with canola oil cooking spray or whatever oil you have or prefer.
I used a pyrex dish to bake it in at 50 mins on 375 degrees.
You can use 2 boxes of Jiffy if you want a thicker height. So if you decide to use 2 boxes of Jiffy just double up this recipe. Get your taste buds ready and enjoy!

INGREDIENTS:
●1/2 cup water , warm
●2 teaspoons instant yeast
●2 teaspoons sugar
●5 -8 cups white flour , DIVIDED (the amount you will need depends upon the humidity in your region)
●1 1/2 cups coconut milk , lowfat version
●1/2 cup coconut oil
●2 tablespoons sugar
●1 teaspoon salt
Belizean Creole Bread
Hi welcome to Caribbeanj. Thank you for coming into the kitchen with us.
Ingredients:
3/4 cup milk ( coconut, half n half)
2 tbsps unsalted butter
1 1/2 honey or sugar 1 1/2 teaspoons active dry yeast
2 cups bread flour (2 cups all purpose flour adding 1 tablespoon of ground flaxseed for each cup of flour)
1/2 tsp salt
Instructions:
1) heat the milk on medium or microwave until milk is hot. Add butter and sugar or honey. Let cool to room temperature or (feels like a baby’s bath water)
2) Add yeast let set aside for 5 to 10 minutes. If your yeast is good then this mixture will be foamy and frothy in 5 minutes. If yeast is weak or old then you will have minimum bubbles. Throw this out and start over.
3) In a large bowl or food processor add flour, flaxseed and salt
4) Add milk mixture a little at a time. Mix with a wooden spoon until a dough forms. Dough should be a little bit sticky, let it rest for 20 minutes before kneading. After 20 minutes dump dough on a lightly floured surface and knead until you have a dough that is stretchy soft, elastic and smooth. Dust hands with a little flour if dough is sticking to hands. Takes about 5 to 8 minutes to knead dough.
5) You may have to add little oil at this stage depending on the humidity of your kitchen. After kneading put dough in a greased bowl, cover with a damp cloth and let rise until double in size takes about one hour or more if your kitchen is cold.
Punch down dough and divide dough into amount of rolls you desire. This dough will make 6 Belize size boules.
Place on a greased pan-let rise again, about 30 minutes bake at 350 for 16 - 18 minutes until the tops are golden brown.

Bread pudding
Approx- 4-6 servings
Ingredients:
4 eggs
2 cups evaporated milk
3/4 cup condensed milk
1 tbsp vanilla (Molina blend preferred)
1 tbsp dark/gold rum
10- 12 slices bread/bun (buttered)
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
