How To make New Mexico Spoon Bread
1 cn Cream style corn
3/4 c Milk
1/3 c Melted shortening
1 1/2 c Cornmeal
2 Eggs, slightly beaten
1/2 ts Soda
1 ts Baking powder
1 ts Salt
1 ts Sugar (optional)
1 1/2 c Grated cheese
4 oz Green chile, chopped (remove
-the seeds and devein) Mix all ingredients. Pour the batter into a greased cast iron skillet. Bake at 400 degrees F in oven for 45 minutes; cool slightly, slice like a pie, and serve. For those who don't want or have the time to prepare from scratch, I have had excelent results by useing 2 packages of cornbread mix (the kind in a tear open envelope, not the box) prepared as on the package, then stiring in the cream corn, green chile, and cheese just before pourin it into the skillet. Use the same oven temp and cooking time as described above ( the time indicated on the package needs to be increased because of the added ingredients. Spoon bread southern style, a recipe that goes back to 1850, a side dish that is good doing the holidays, heat right from the oven with butter on top.

RECIPE:
1 cup cornmeal, white or yellow
1 cup boiling water
2 cups milk
1 teaspoon salt
2 teaspoon baking powder
3 eggs room temp
2 tablespoon melted unsalted butter
Preheat oven 375
Pour boiling water over corneal mix well let cool one minute, add milk, baking powder, beat eggs add to mixture, mix all well together add butter last. Well grease cast iron skillet, bake 35 minutes or until golden brown.

MEXICAN SPOON BREAD with Green chiles and cheese ⭐️
This is one of my all-time favorite comfort food recipes???????? It uses mild green chiles so there is no heat in this recipe. Just delicious soul warming goodness!
MEXICAN SPOON BREAD
1 cup yellow cornmeal
1 teaspoon salt
½ teaspoon baking soda
¾ cup milk - I USE WATER and it turns out fine
⅓ cup vegetable oil
2 eggs, beaten
1 can cream-style corn
½ cup green chiles
1½ cups grated extra sharp cheddar cheese - I use Tillamook
Combine wet ingredients first and then dry. Pour half of batter into hot pan with small amount of oil in bottom of pan. Put half of green chilis on cornbread. Add half of the cheese then remaining cornbread batter. Top with remaining green chilis. Reserve remaining cheese until later. Bake in 400 oven for about 42 minutes then top with remaining cheese and cook for another few minutes until cheese is melted. Total cooking time is about 45 minutes

Betty's Version of Boone Tavern Spoonbread
Betty demonstrates how to make the spoonbread for which Boone Tavern Restaurant (in Berea, KY) is famous. The recipe comes from the cookbook Look No Further, written by Richard T. Hougen, manager of the Boone Tavern Restaurant from 1935 1975.
Betty's Version of Boone Tavern Spoonbread
3 cups milk
1 ¼ cups cornmeal
3 eggs
2 tablespoons butter
1 ¾ teaspoons baking powder
1 teaspoon salt
Stir meal into rapidly boiling milk. Cook until very thick, stirring constantly. Remove from fire and allow to cool. The mixture will be cold and very stiff. Add well-beaten eggs, salt, baking powder and melted butter. Beat with electric beater for 15 minutes. Pour into well greased casserole. Bake for 30 minutes at 375 degrees. Serve from casserole by spoonfuls. This is the spoon bread for which Boone Tavern is so famous. Be sure to use white cornmeal for the true southern bread.
