How To make New Mexico Spoon Bread
1 cn Cream style corn
3/4 c Milk
1/3 c Melted shortening
1 1/2 c Cornmeal
2 Eggs, slightly beaten
1/2 ts Soda
1 ts Baking powder
1 ts Salt
1 ts Sugar (optional)
1 1/2 c Grated cheese
4 oz Green chile, chopped (remove
-the seeds and devein) Mix all ingredients. Pour the batter into a greased cast iron skillet. Bake at 400 degrees F in oven for 45 minutes; cool slightly, slice like a pie, and serve. For those who don't want or have the time to prepare from scratch, I have had excelent results by useing 2 packages of cornbread mix (the kind in a tear open envelope, not the box) prepared as on the package, then stiring in the cream corn, green chile, and cheese just before pourin it into the skillet. Use the same oven temp and cooking time as described above ( the time indicated on the package needs to be increased because of the added ingredients. CORN SPOON BREAD creamy corn bread you eat with a spoon!

Pre-heat oven to 350
Ingredients:
1 can cream style corn (15.5 oz) (or make your own)
1 can whole kernel corn (15.5 oz)
1 C cheddar cheese, shredded
2 eggs, beaten
6 T bacon grease (or any grease, or butter) melted
1/2 C cornmeal
1/2 - 3/4 C sugar (to taste, I like it sweet)
1/2 t pepper
1 t garlic salt
1/2 C onion, chopped fine
2-3 jalapeños, chopped(optional
Mix all ingredients in a medium size mixing bowl.
Pour into a greased 8 in skillet or 8X8 casserole dish.
Bake 30-35 minutes until just set (do not over cook).
Get yourself some and eat it with a spoon. So good. Hot or cold in my book!

MEXICAN SPOON BREAD with Green chiles and cheese ⭐️
This is one of my all-time favorite comfort food recipes???????? It uses mild green chiles so there is no heat in this recipe. Just delicious soul warming goodness!
MEXICAN SPOON BREAD
1 cup yellow cornmeal
1 teaspoon salt
½ teaspoon baking soda
¾ cup milk - I USE WATER and it turns out fine
⅓ cup vegetable oil
2 eggs, beaten
1 can cream-style corn
½ cup green chiles
1½ cups grated extra sharp cheddar cheese - I use Tillamook
Combine wet ingredients first and then dry. Pour half of batter into hot pan with small amount of oil in bottom of pan. Put half of green chilis on cornbread. Add half of the cheese then remaining cornbread batter. Top with remaining green chilis. Reserve remaining cheese until later. Bake in 400 oven for about 42 minutes then top with remaining cheese and cook for another few minutes until cheese is melted. Total cooking time is about 45 minutes
