Homemade Pita Chips | Show Me The Curry Vegetarian Recipe

They are a fantastic accompaniment to hummus and even a fabulous substitution for papdi in papdi chaat. You can make the pita chips with homemade or store bought pita bread. Spicy Pita Chips
ingredients:
1 pkg. PITA BREAD
OLIVE OIL
SALT
SPICES: curry powder, garlic powder, cajun seasonings, etc. (whatever you like)
directions:
Cut pitas into triangular chip shapes. Each pita will easily yield 12 chips. Soak one side of each pita triangle in olive oil and stack pitas so the soaked side of one is stacked against the unsoaked side of the next. Press stacked chips together—this will flatten the chips and suffuse the oil throughout.
Arrange chips on a flat baking sheet. Salt to taste. Add spices—the more the better, in my opinion. I usually bake three distinct batches. Curry is probably my favorite—just salt and lots of curry on a toasted pita chip, it's delicious. Garlic is great, too. Try some Tony Chachere's seasoning (or comparable cajun seasoning) on a chip—or simply add a sprinkle of cayenne pepper with Cumin. Whatever your favorite seasonings are, give them a try.
Bake the chips 8-10 minutes in a pre-heated oven at 350 degrees Fahrenheit. Oven cooking times vary, so keep an eye on your first batch to see how long it takes to toast them the way you like—they will burn quickly if forgotten. I like mine CRISP. One side of the pita will be thinner than the other side and some triangles may need to be removed from the oven before the other chips are done. You'll figure it out.
And make some hummus, too.

Here's another recipe I make for my 17 month old. It's a great on the go snack and a much healthier alternative to crisps. It's also a great one to serve with your favourite dip if you're having guests over.

Baba Ganoush Recipe:
Egg Plant (Big) - 2 nos
Oil - 1 tbsp
Onion (finely chopped) - 1 no
Tomato (finely chopped) (de-seeded) - 1 no
Bell Peppers (mixed) (finely chopped) - ¼ Cup
Garlic (finely chopped) - 1 tsp
Olive Oil (Extra Virgin) - 4 tbsp
Lemon - ½ no
Salt - 1 tsp
Pomegranate - ¼ Cup
Parsley/Mint Leaves (finely chopped) - 1 tbsp (Optional)
Cooking Instructions:
1. Coat the big brinjal in oil and roast them over an open flame until charred. Rest them for 5 minutes or until cool enough to handle.
2. Peel the charred skins off completely.
3. Using a knife, mash the brinjals by finely mincing.
4. Transfer the egg plant to a bowl, mix the salt, lemon juice and olive oil.
5. Add the chopped vegetables and herbs and mix well.
6. Finally add the mix the pomegranate seeds.
7. Garnish with mint sprigs, pomegranate seeds and olive oil.
Cooking Tips:
1. Completely peel the skins otherwise it turns bitter.
2. Char the brinjal skins evenly and fully.

Pita Chips Recipe:
Pita Bread - 2 nos
Oil - For Deep Frying
Cooking Instructions:
1. Cut the cooked pita bread into smaller pieces in the shape of your choice.
2. Deep fry in hot oil for about 30 secs until golden brown and drain from the oil.
3. Cool completely and serve with the dips of your choice.
4. Store them airtight for upto 5 days.
Cooking Tips:
1. To make a baked version, apply oil on both sides of the pita bread and bake in a preheated oven at 180C for around 10 mins, until golden brown.

EASY PITA CHIPS RECIPE
Welcome to STUDENT MEALZ! How to make oven baked pita chips? Well today we're going to tell you just that ;p
== INGREDIENTS ==
- about 3 pita breads
- some olive oil
- salt
- pepper
- tex mex mix/or any kind of seasoning you like
== RECIPE ==
1. Cut the pita breads in 4 pieces
2. Cut them open so you have 8 pieces from 1 bread
3. Place them on a baking tray covered with baking paper
4. Sprinkle some olive oil on top
5. Season with pepper, salt and the rest of your seasoning
6. Preheat the oven to 180°C and place in the pita chips for about 10 minutes
7. Now that's done, they're ready to be eaten with guacamole, humus or just au naturel!!
