At first site I thought wow that’s too much onion on a burger! But I was wrong! The patty was full of flavour! The red onion just gave it the perfect extra boost.
Apart from knowing that the red onion is sweeter than the brown, there has been some studies done in 2017, published in Food Research International found that red onions were most effective at killing human cancer cells compared with other onions thanks to their higher levels of the antioxidants quercetine and anthocyanin. Interesting, right?
The red onion is more commonly eaten raw due to it’s sweet taste, but I can’t eat either if they haven’t been fried or caramelised in a pan.
The sweetness of the grilled pineapple was a huge bonus on this burger so please don’t leave out!

RECIPE
Serves 4
3 tablespoons of olive oil
1 onion, finely chopped
2 garlic gloves, chopped finely
500g mince beef
1 cup breadcrumbs
1 zucchini, peeled and grated and drained of juices
3 tablespoons BBQ sauce
1 large egg, lightly beaten
6 slices of pineapple
1 large red onion, sliced into rings
6 hamburger buns, halved
1/2 cup BBQ sauce (extra)
100g mixed lettuce leaves
Heat oil in a large frying pan on high. Saute onion and garlic for 2-3 minutes until tender. Remove and cool.
In a large bowl, combine mince, breadcrumbs, zucchini, sauce, egg and sautéed onion mixture. Mix well. Mould into 6 patties.
Pre-heat a pan, add 1 tablespoon of olive oil, cook patties for approx 4-5mins on each side or until cooked through. Add 1 extra tablespoon of olive oil in the pan and fry the pineapple pieces for a min or so on each side, just until they pick up a little golden colour. Set aside. Add the last tablespoon of olive oil and fry the red onion until just soft. Set aside.
Spread some of the BBQ sauce over each side of the bun, top with some lettuce, beef patty , grilled pineapple and red onion.
Ready to be served
Please note: you can grill the buns if you wish before constructing the burger.
