How To make Pineapple Beef Marinade
Pineapple juice, 6 ounce can 2 T Dark brown sugar
3 x Garlic cloves, run through g
1/4 t Ginger, ground
1/2 t Garlic powder
1/2 t Onion powder
1 T Peanut oil
1/4 t White pepper, ground
1/8 t Cayenne pepper (or less, to
3 t Soy sauce
Add all the ingredients, stiring with wish making sure the sugar dissolves. Allow to sit for an hour so the flavors blend. Place meat in a freezer bag large enough for all the meat to lay flat on one side of the bag. Stir marinade one more time making certain sugar is dissolved and pour mixture in bag. Exhaust extra air out of bag. Allow to marinade overnight, turning bag over several times. This is expecially good for grilled steaks! Ingredients:
pork meat - 300 g (10.6 oz)
pineapple juice - 200 ml (6.76 fl oz)
salt - 7 g (0.25 oz)
black pepper - 5 g (0.18 oz)
TO MARINATE 30 MIN
eggs - 2 pieces
flour - 100 g (3.5 oz)
olive oil - 25 ml (0.85 fl oz)
red bell pepper - 1 piece
green bell pepper - 2 pieces
onion - 1 piece
salt - 7 g (0.25 oz)
black pepper - 5 g (0.18 oz)
sweet paprika - 5 g (0.18 oz)
soy sauce - 20 ml (0.7 fl oz)
starch - 15 g (0.18 oz)
water - 100 ml (3.4 fl oz)

Chinese Beef and Pineapple Recipe - Fresh NOT tinned pineapple!
Chinese Beef and Pineapple Recipe using fresh pineapple
This Chinese restaurant and takeout recipe is another one of those comfort foods from my childhood.
The texture and flavour of the meaty beef is in perfect contrast to the sweetness and sharpness of the pineapple and the rich
sauce, that is gently flavoured with a hint of garlic and ginger. In this video I’ll show you how to prepare fresh pineapple rather than tinned - and it makes all the difference. And how to tenderise the beef to make it melt in your mouth.
Perfect with freshly steamed or fried rice AND chips! Check out my Chinese chips recipe. For those in the US chips = fries.
For this recipe, which feeds 3-4 people you will need
2 8oz/225g rump steaks
A fresh pineapple
1/2 a white onion roughly chopped
2 cloves of garlic finely chopped or crushed
1/2 a thumb sized piece of fresh ginger finely chopped or grated
For the marinade
1 tsp of sugar
1 tbsp of light soy sauce
1/2 tbsp of pure sesame oil
For the sauce
3 tbsp of tomato ketchup
2 tsp sugar
200ml of water or stock
A good pinch of salt and pepper
For Velveting
1 1/2 tsp of cornflour
1 tsp of sodium bicarbonate
And 1 tbsp of cornflour mixed with a little water for thickening
