How To make Pickled Kohlrabi
3 Kohlrabi (abt. 1 qt.)
-peeled, sliced 1/4" thick 2 lg Carrots; peeled
cut into sticks 2 Garlic cloves; crushed
1 Bay leaf
3 lg Sprigs fresh dill
:
PICKLING MIXTURE------------------------------ 3/4 c White vinegar
1 1/4 c ;Water
3 tb Sugar
1 ts Mustard seed
1/2 ts Dill seed
1/4 ts Red chili flakes
1 ts Salt
Parboil carrots for 3 minutes. Mix kohlrabi and carrots; pack in a 1 qt. glass jar along with garlic, bay leaf and fresh dill. In a saucepan, combine pickling mixture. Heat, stirring, until it boils and sugar is dissolved. Pour boiling mixture over kohlrabi, filling jar completely. Cover jar. When cool, refrigerate for 3 to 4 days before using to let flavors blend. Instant Kohlrabi Pickle????
Kohlrabi aka Ganth Gobi, Knol Khol is related to the cabbage family and widely popular in Asia & Europe! It’s also know as German turnip and it’s taste and texture are similar to a blend between turnip & cabbage ????????
Here’s how you make this flavourful aachar at home ☺️
Ingredients :
Kohlrabi - 2 nos
Mustard Oil - 1/4th Cup
Kashmiri Chilly Pwd - 1 Tsp
Hing - A Pinch
Kalonji - 1 Tsp
Spice Blend :
White Mustard - 2 Tsps
Black Mustard - 1 Tsp
Fennel Seeds/ Saunf - 2 Tsps
Fenugreek Seeds/ Methi Dana - 1/8th Tsp
Cumin/ Jeera - 1 Tsp
Coriander/ Dhaniya - 1 Tsp
Vinegar - 2 Tsp
Jaggery - 2 Tsps
Salt - 2 Tsps
Process :
* To process the kohlrabi - peel them, cut the ends off & cut it further into matchsticks (as shown in the video) - Wash thoroughly & pat them dry
* Meanwhile, in a saucepan, add in the white mustard, black mustard, methi dana, fennel seeds, cumin & coriander seeds - dry roast on low heat & allow them to cool down slightly before crushing them into a coarse powder using a mortar pestle or a small blender
* In a saucepan, heat up some mustard oil until it starts smoking - take it off the heat and cool it down before adding in a pinch of hing, kalonji seeds & red chilly powder - keep aside for later
* Add the spice powder, chilly mustard oil, jaggery, vinegar & salt to taste to the kohlrabi - mix well until combined
* Add the quick pickle to an airtight, clean & dry jar - let it sit in the sun for a day or two before consuming & Enjoy????✨
