INGREDIENTS:
1 cup of Chipotle Pepper in Adobo sauce
4 Cloves of Garlic
1 1/2 cup of Sour Cream
1/2 cup Mayonnaise
2 tbsp Sugar
Salt and Pepper to taste
LET'S MAKE IT:
•Blend the 1 cup of Chipotle Pepper in Adobo sauce with 4 Cloves of Garlic. Blend until smooth
• In a large mixing bowl add the blended Chipotle Pepper and Garlic, 1 1/2 cup of Sour Cream, 1/2 cup Mayonnaise, 2 tbsp Sugar, Salt and Pepper to taste.
•Mix well. Store in glass container in refrigerator.

Fried Pickled Okra with Creamy Chipotle Dip - Blast From The Past
Paula and Bobby and hangin' out and they're putting some twists on some old family recipes. Today they're cooking up a scrumptious Fried Pickled Okra with Creamy Chipotle Dip!
Ingredients:
Okra and Chipotle Dip -
1 1/4 cups recipe follows fry mix
1 cup beer
1 16-ounce jar drained pickled okra
3 cups self-rising flour
1/2 cup self-rising white cornmeal
1/2 teaspoon salt
1/2 teaspoon crushed black peppercorns
1 8-ounce package softened cream cheese
2 tablespoons mayonnaise
1 chipotle in adobo sauce
2 juiced limes
3 tablespoons for garnish chopped green onion
Preparation:
Okra -
1. Heat the oil to 350 degrees F in a deep skillet or fryer
2. Combine the Fry Mix with the beer
3. Add the okra, coating it in the batter
4. Fry the okra, about 4 pieces at a time, turning the pieces frequently, until golden brown, about 2 minutes
5. Transfer the okra to a paper towel-lined plate to drain
6. Serve immediately with the Creamy Chipotle Sauce
Fry Mix -
1. Whisk together the flour, cornmeal, salt, and pepper
2. Store in an airtight container in the pantry until needed
Creamy Chipotle Sauce -
1. Blend the cream cheese, mayonnaise, chipotle, lime juice, and salt in a food processor until smooth
2. Cover and refrigerate until needed
3. Garnish with green onions

This chunky chipotle chili recipe is made with a mix of peppers, chili seasoning, and lots of chipotles in adobo sauce for the best rich and smoky flavor.

THINGS YOU’LL NEED:
1 tablespoon olive oil
1.5 pound ground turkey or ground beef - I’m using a combination of both
1 large onion, chopped
1 jalapeno pepper, chopped
1 poblano pepper, chopped
1 hot chili pepper, chopped (for a spicier version – try a habanero or ghost pepper – optional for a nice and extra spicy chili)
4 cloves garlic, chopped
2 cans red kidney beans
3 cans fire-roasted tomatoes 42 ounces, or use equivalent fresh
2 tablespoons chili powder - I like to use a blend of ancho and guajillo powder, but use your favorite blend, or try this homemade chili powder blend
1 7- ounce can chipotles in adobo sauce - use half the can for a milder chipotle flavor
1 teaspoon freshly ground cumin
1 teaspoon red chili flakes
Salt and pepper to taste
FOR SERVING: Sliced roasted jalapenos, spicy chili flakes, fresh chopped parsley, or cilantro

Pickled Red Onion:
1 red onion
1 cup white vinegar
1 cup water
1 cup red wine vinegar
1/4 cup white sugar
salt, red pepper flakes
1 tsp peppercorns
Pico:
1/2 diced red onion
1 jalapeno
1/4 cup diced cilantro
1/2 cups diced tomato
juice of 1 lime
