How To Make Pickles Without A Recipe
This is something everyone should do at least once. I mean come on, these are the easiest pickles you will ever make in your life. With this method you can pickle just about any vegetable with only about 5 minutes of work, plus it's cheap as heck. Never waste money on fancy pickles at the store ever again, and enjoy a better product while you're at it.

Ingredients you'll need to make the pickle liquid base:
Equal parts white distilled vinegar and water
2/3 tablespoon per cup of total pickle liquid
Aromatics of your choice (fresh garlic, fresh herbs, black peppercorns, coriander seeds, bay leaves, juniper berreis, etc.)
Vegetables of your choice (cucumbers, carrots, onions, green onion whites, hard peaches, radish, etc.)
Example Pickle Liquid Recipe:
2 cups (400g) white distilled vinegar
2 cups (400g) water
2.5 tablespoons (40-45g) kosher salt

Szechuan pickled peas
This recipe started out as a joke, but ended up being something really special!

8 oz fresh peas
2 to 4 Chinese dried chili peppers
1 Tb. Szechuan peppercorns
1 1/4 inch slice of ginger, lightly crushed
1 garlic clove, peeled and lightly crushed
1 tsp sugar
1 cup white wine vinegar
1/4 - 1/3 cup water
1 Tb. white vinegar
1 Tb. Chinese black vinegar
Cooking
Preheat a non stick pan over medium heat.
Lightly coat pan with the peanut oil
Add the peas to the pan, and cook, stirring and flipping for 4 to 5 minutes, until they turn bright green, and have softened slightly.
Add the chili peppers, Szechuan peppercorns, ginger, garlic, and sugar to the pan. Cook an additional minute. (To make serving easier, you could place the chili peppers, Szechuan peppercorns, ginger, garlic, and sugar in a cheese cloth bag)
Add the wine vinegar.
When the vinegar start to barely simmer, add the white vinegar, and Chinese black vinegar. Immediately remove from heat.
Let the peas cool in the pan.
Pour the entire mixture into a glass container. Cover, and refrigerate for 24 hours before serving.

Matar 500 gm
Red chilli powder 1 tesp
black pepper 1 tesp
Salt
black salt
turmeric powder 1 tesp
hing powder 1 tesp
Rai 2 tesp
Zeera 2 tsp
sabit coriander 2 tsp
lemon juice
ajwain
methi ke beach
red chilli 3 to 4
Oil 3 cups
Sugar 1 cup
how to prepare matar pickle?
( 1 ) Take 3 cups of water in a vessel and bring it to a boil.
( 2 ) Add 1 tesp of sugar to watar and boil the water till sugar dissolves. add 2 cups of green peas to the water and boil them for 2.5 minutes.
( 3 ) Turn off the flame and Strain the peas.
take a bowl of water with ice cubes and add peas to it.
( 4 ) keep them in cold water for 1.3 minutes.
Transfer to the strainer and drain the water completely.
( 5 ) Spread the peas on a cloth and either pat dry them or leave them under the fan for 15 to 20 minutes.
( 6 ) dry roast 1 tbsp of dry coriander seeds, 1 tbsp of fennel seeds, 1 tbsp of cumin seeds, 1 tsp of Fenugreek seeds, 1 tsp of carom seeds, and 10 - 12 black pepper for 1 or 1.5 minutes.
( 7 ) Add 1 tbsp of mustard seeds and roast it together with spices for 15.20 seconds.
( 8 ) Once the masala cools down, coarsely ground them in the mixer.
( 9 ) heat 1/2 cup of Oil in the pan till it smokes .
Turn off the flame and allow it to cool.
( 10 ) Oil
( 11 ) Take peas in a bowl and add coarsely ground spices to the peas.
( 12 ) Mix 2 tsp of Red chilli, black chill 2, salt 2 tesp , black salt, and Oil in the peas.
( 13 ) Mix well leave the pickle for 2 days and stri it once a day.
( 14 ) green peas pickle is ready to be served.
