How To make Peppers and Green Chili Meatloaf
1 pound lean ground beef
1/2 pound ground pork
2 Italian sausage links
1 cup cornbread stuffing
* see note
1 onion :
chopped
1 garlic clove minced
1/4 teaspoon garlic powder
4 ounces green chiles :
minced
1 egg
1 tablespoon chili powder
8 ounces tomato sauce
1 pinch ground nutmeg
1/2 teaspoon Worcestershire sauce
1 green pepper
* Use prepared stuffing mix in box.
Combine the ground meat, pork, and sausage in large bowl. Mix in the= stuffing mix (which has been crushed slightly), onions, chiles, beaten egg,= chili powder, garlic and garlic powder. Pour in half the tomato sauce and= mix very well with your hands. (Wear plastic baggies on hands.) Slice the green bell peppers into very thin slivers. Grease a cookie= sheet with at least 2-inch sides. Place the green peppers onto the sheet. Press the meat mixture into a loaf dish and then turn out on top of the= slivered green peppers, tucking under any peppers slices that are not under= the meat. Bake in a preheated 375-degree oven for 1 hour and 15 minutes. Drain= off any fat from dish. An easy way is to absorb the fat with paper towels.= Pour the remaining tomato sauce, which has been blended with the nutmeg and= Worcestershire sauce, over the top of the meatloaf. Continue baking for 5-10 minutes longer. Let stand 15 minutes before= slicing.

For the blend- 1/2 carrot, 4 mild chilli peppers, 1 onion, 2 spring onions, 3 sprigs thyme, 2 garlic cloves, parsley
2 tsp salt
1 tbsp garlic powder
2 slices bread for breadcrumbs or 1 cup breadcrumbs
1 tbsp all purpose seasoning
1 tsp chilli powder
1 egg
1 splash milk
For the glaze

1/4 cup ketchup
1/4 cup barbecue sauce
2 tbsp mustard
2 Tbsp honey or brown sugar
1/2 tsp black pepper
‼️Bake on 200•C for 45 minutes. Add the glaze then bake for a further 25 minutes ‼️

INGREDIENTS
1-2 lbs meat of choice .. you can use ground chicken. beef. or turkey
* used 3 lbs which can serve 6-7 people .. keep in mind meatloaf is great for leftovers such as sandwiches etc.. this also freeze well, just wrap in seran wrap and freeze*
3 slices bread
1 cup milk
eggs * 1 egg per lb of meat used *
desire amount chopped bell pepper and onion ( I used about 1/2 each*)
3 tbs wortchesire sauce
3 tbs onion and garlic powder
1 tbs salt
2 tbs beef bouillon ( or 2 packs onion soup mix )
1/2 cup bbq sauce ( or desire amount )
To make the glaze *This is to taste so please adjust to your liking *
1 cup ketchup
1/3 cup brown sugar
1/2 cup bbq sauce
3 tbs wortceshire sauce

Homemade Meatloaf with Pepper & Onion Relish - Simple and Delicious
Homemade Meatloaf with Pepper and Onion Relish
2 1/2 pounds ground beef
2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons Mrs. Dash original seasoning
1 cup finely diced green pepper
1 envelope Onion Soup Mix
2 eggs
15 ounces diced tomatoes, drained
2 cups Quick Cooking Oats
1/2 cup tomato sauce
heaping 1/2 cup Pepper & Onion Relish in the meatloaf mixture
heaping 1/2 cup Pepper & Onion Relish on top
Preheat your oven to 375°. Prepare your meatloaf baking pan by spraying with nonstick spray. Set aside.
In a large bowl, combine the ground beef, salt, black pepper, Mrs. Dash, diced green pepper, onion soup mix, eggs, diced tomatoes, quick cooking oats, tomato sauce, and 1/2 cup of pepper and onion relish. Mix everything together well using your hands.
Scoop the meatloaf mixture into your prepared loaf pan, mound on top, and cover with the remaining 1/2 cup of pepper and onion relish.
Bake for one hour to one hour 15 minutes or until the center of the meatloaf is done. Do not over bake.
After removing meatloaf from the oven, allow it to rest on the counter for at least 20 to 30 minutes before slicing.
