How To make Steak & Green Peppers
Steak & Green Peppers No. 1460 Yields 8 Servings
2 lb Round Steak, Cut 1/2" Seeded, Cored & Cut
Thick Into 1/2" Strips 1/4 Cup Soy Sauce 1 Cup Water Chestnuts,
1 Cup Beef Bouillon Sliced
2 Cloves Garlic, Mashed 3 Tbls Cornstarch
1/2 tsp Ginger 1/4 Cup Water
3 Tbls Vegetable Oil Boiled Rice
1 Cup BOILING Water
3 LARGE Green Bell Peppers,
Cut the steak into 1/2" strips. Combine the soy sauce, beef bouillon, mashed garlic and ginger. Pour this marinade over the steak strips. Cover. Marinate, refrigerated, at least 2 hours (up to 12 hours). Drain the meat. Discard the garlic. Reserve 1/2 cup of the marinade. Dry the meat strips on toweling. Brown the meat in the vegetable oil in a large skillet. Heat the reserved marinade in a separate pan. Add the reserved marinade. Add the BOILING water. Cover. Simmer about 45 minutes. Add the green bell pepper strips and the sliced water chestnuts. Simmer until the meat is tender. Mix the cornstarch in the second measure of water until smooth. Gradually stir this mixture into the meat mixture. Continue stirring until the gravy thickens. Serve over boiled white rice.

Ingredients
Stir-fry sauce
3 tablespoons dark soy sauce
1 tablespoon rice wine
2 tablespoons oyster sauce
2 teaspoons sugar
1 tablespoon cornstarch
1 tablespoon sesame oil
½ cup water
For the stir-fry
1 pound beef we use sirloin
¼ teaspoon baking soda
1 tablespoon cornstarch
1 medium onion
1 medium red bell pepper
1 medium green bell pepper
3 scallions
2 teaspoons minced ginger
4 cloves garlic minced
black pepper
Make the Sauce:
Combine dark soy sauce, rice wine, oyster sauce, sugar, cornstarch, sesame oil, and ½ cup of water. Set aside.
Prepare the Meat:
Slice the meat thinly
Add 2 tablespoons of stir-fry sauce to the meat and mix them together.
Add baking soda and cornstarch. Mix well for even distribution.
Velvet the meat for about 15 minutes while you prepare the rest of the ingredients.
Sear the Meat:
Set your wok or skillet over high heat.
Add a bit of oil to coat the bottom when the pan is almost smoking.
Spread the beef meat in a single layer.
Sear for about 3 minutes without touching them.
Transfer to a plate.
Cook Vegetables:
Cook onions and red and green bell peppers for a minute until slightly blistered.
Add scallions and push them to one side.
Slightly lower the heat at this point.
Add a bit of oil and sauté ginger and garlic for about 30 seconds.
Toss them all together.
Combine and Finish:
Add meat and sauce to the pan.
Let the sauce slightly thicken for about 30 seconds.
Add some black pepper and mix them together.
