How To make Peanut Butter Chocolate Balls
1 1/2 c Graham cracker crumbs
1 1/2 c Flaked coconut
1 1/2 c Peanuts or pecans; chopped
1 c Butter or margarine; melted
16 oz Powdered sugar; sifted
12 oz Crunchy peanut butter
1 ts Vanilla extract
24 oz Semisweet chocolate morsels
3 tb Shortening

Combine first 7 ingredients, stirring well. Shape mixture into 1-inch balls. Combine chocolate morsels and shortening in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Dip each peanut butter ball into chocolate mixture. Place on wax paper to MICROWAVE DIRECTIONS: Combine first 7 ingredients, stirring well. Shape mixture into 1-inch balls. Combine chocolate morsels and shortening in a 1-1/2-quart bowl; microwave at MEDIUM (50% power) for 5 to 6 minutes or until chocolate is softened; stir well. Dip each peanut butter ball into chocolate mixture. Place on wax paper to cool. Store in refrigerator. NOTE: Peanut Butter Chocolate Balls may be frozen in an airtight container for later use. Remove balls from freezer 1 hour before serving. -----

This recipe is Gluten Free. These are a tradition at my house. I make them every Christmas and sometimes Thanksgiving and New Years. Valentines Day is a good time to make them too.
I love this recipe plain and simple. I think it's even better than Reese's Peanut Butter Cups. Who doesn't love chocolate and peanut butter?
Well I do know one person. Anyway, they are addicting no doubt about that. Did I mention they go by other names? Buckeye balls. Who'd a thought.
The difference between a buckeye ball and a peanut butter ball is how it's dipped in chocolate. The peanut butter ball is fully covered in delicious chocolate and the buckeye is only covered about 3/4 of the ball. The top quarter of the ball is left uncovered so you can see the peanut butter.
I think I like it fully covered because I love chocolate. You can cover as much or as little as you want. They're your peanut butter buckeyes.
On to the recipe. I'm going to show you what ingredients to use, how to mix the peanut butter mixture, and then how to melt and dip the balls into chocolate.
You can use milk chocolate or semi sweet chocolate chips. I'm a milk chocolate fan. You can use pretty much any brand you like. Nestle works well. So does Ghirardelli. My favorite is Guittard.
When dipping the balls you can use a number of different techniques. For example you can use spoons to coat the balls or a couple of forks. I like using two toothpicks. Don't forget to lick your fingers. They will get chocolate on them. That's one of the perks of dipping.
If you really want to get fancy ( I didn't show this in the video) you can dip your balls in the chocolate and then set on wax or parchment paper and then go back later and drizzle more chocolate on top.
Here is how you would do it: Take a small ziplock bag and pour some of the chocolate into the bag and zip it shut. Snip off a small corner of the bag and squeeze some vertical lines over the peanut butter ball. People will think you are a professional candy maker they look so good!
Here is the recipe. These baby's will make about 6 to 7 dozen balls depending on how big you make them. They are a nice alternative when you get tired of cookies. If that's possible!
1 ½ cups peanut butter, Skippy or equivalent, not natural peanut butter (it gets runny)
3 and 1/2 cups to 3 and 3/4 cups of powdered sugar
½ cup butter. softened
1 tsp. vanilla
12 oz. bag of milk chocolate chips, Guittard is my favorite for its flavor
2 Tbs. shortening

INGREDIENTS
- 2 cups peanut butter
- 1/2 cup butter, melted and slightly cooled
- 1 1/2 tsp vanilla extract
- 3 1/2 cups powdered sugar
- 3 cups rice cereal
- 1 lb bittersweet chocolate
INSTRUCTIONS
In a large bowl, combine the peanut butter and melted butter. Stir until combined and smooth. Stir in the vanilla and powdered sugar. Mix until incorporated. Add in the rice cereal and combine until evenly mixed.
Using a 1 tbsp-size cookie scoop, make the balls. Roll in hands to create smooth, even balls and set on a parchment-lined baking sheet. Once all balls are made, set in the refrigerator to chill for 20 minutes.
While the balls are chilling, melt the chocolate with 1 tbsp of coconut oil in a bain-marie.
Once the chocolate and coconut oil are melted, remove the peanut butter balls from the refrigerator. One at a time, roll the balls in the melted chocolate, allowing the excess chocolate to drip off. Set the dipped balls back on the parchment paper and sprinkle with flaky salt. Cool for 10 minutes and enjoy.

1 tbsp maple syrup
1 tbsp coconut oil

pinch of salt

350F for 16 mins in a loaf pan (20-22 mins if you double the recipe)
