1 cn Frozen limeade(6oz) 1 pk Gelatin,peach(3oz) 1 cn Peaches,sliced cling(29oz) 2 T Lime juice 1 Tonic water,chill(20oz btl) Lime slices 1. In 3-quart pitcher, prepare limeade concentrate as label directs. Measure 1 cup reconstituted limeade into 1-quart saucepan; over high heat, heat to boiling. Remove saucepan from heat. Stir peach flavor gelatin into hot limeade, stirring until gelatin completely idssolves. Stir mixture into limeade in pitcher. 2. Place half of peaches and their syrup in blender; blend at high speed until pureed. Repeat with remaining peaches and syrup. Stir puree and lime juice into limeade mixture. Refrigerate at least 1 hour or until well chilled. 3. To serve, stir tonic water into limeade mixture. Garnish with lime slices.

HOW TO MIX THIS COCKTAIL Fill a shaker with ice cubes. Add Absolut Apeach, lemon juice and simple syrup. Shake and strain into a chilled highball glass filled with ice cubes. Top up with soda water. Garnish with lemon and peach.

Lacto Peach Fizz
Tequila, Campari, Lemon, Lacto peach puree, agave, soda
This Lacto Peach Fizz from is so good- normally most of his recipes involve a rotovap, an arm, and a leg, but this low tech highball is a combination of sweet, bitter, funky and salty. Peaches are lacto fermented with some honey and basil, then blended into a puree. Lacto fermentation is not just for kimchi or saurkraut, the possibilites are endless, and they make the fermented product taste more like itself.
40 ml | 1 1/3 oz blanco tequila
10 ml | 1/3 oz Campari
20 ml | 2/3 oz Lemon Juice
15 ml | 1/2 oz Lacto Peach Puree
10 ml | 1/3 oz Agave Nectar
45 ml | 1.5 oz soda
Combine all ingredients except soda into shaking tin and shake with ice. In a highball glass, add ice, then cocktail. Pour soda and stir to incorporate
Lacto Peach Puree
368 g peach
1 tbsp honey
handful basil
2% salt by weight
combine cut peaches, honey, basil and salt together and let sit for 5-7 days, tasting constantly. When peaches have enough tang/ funk, blend ingredients and strain. Set in fridge to slow fermentation down.
