Sunni’s summer fruit fizz
Get creative at your garden party by mixing up this alcohol-free fizz. It doesn’t take long to make a big batch so you can easily keep everyone’s glasses topped up with something a little bit special.
Makes 6 glasses
What you’ll need
3 handfuls of raspberries
Small bunch of red grapes
2 limes
Fresh mint leaves
1 tsp golden caster sugar
Piece of ginger, peeled and finely chopped
2 big handfuls of ice cubes
500ml ginger beer
200ml Nosecco
Fresh basil leaves for garnish
How to make it
1. The day before you make it, put a handful of raspberries, some grapes and chopped lime into the freezer.
2. When you’re ready to make up the fizz, put two handfuls of raspberries into a jug, with the mint leaves and a teaspoon of caster sugar. Mash it all up with the end of a rolling pin.
3. Add the chopped ginger and mash it again.
4. Add the ice cubes, and bash to break them up.
5. Pour in the Nosecco and the ginger beer and stir well.
6. Take your frozen fruit out of the freezer and add to the jug.
7. Pour the fizz into your glasses and garnish with basil leaves.

Peach and ginger is a lovely combination. The mellow sweetness and bright tones is perfect for the spicy and warm flavours of ginger.

Homemade Apple Wine ! Only 3 basic ingredients needed for this recipe. Naturally Carbonated & fizzy
You just need 3 basic ingredients to make this incredible drink - Apples , Raw / Brown Sugar & Water !
3 Apples
200 g Sugar (you can adjust to suit your taste)
3 Litres Water
Some slices of ginger if you like (Optional)
Cinnamon Stick & Star Anise (Optional)
This is a 2 Stage Fermentation.
1. First Fermentation to activate the natural micro organisms.
2. Bottled Fermentation to naturally carbonate.
Method -
1. Make sure that the apple has been washed well.
2. Clean the Glass Jar with HOT water to sterilize it.
3. The water that you will use needs to be boiled & cooled. Only then use.
4. Before adding the apple in, the water has to be cooled completely (this is the MOST important step, else you will kill the good microbes)
5. First fermentation usually takes 60 to 70 hours. Here you will see a froth on top of the jar & it is perfect. You can ferment at room temperature or in the Balcony. The longer you will keep, it will keep becoming less sweeter & more tart. It should have only froth & no other growth, if there is some other growth , that means there has been a contamination.
6. Strain this & transfer this to a glass bottle (Best is if you use a Kilner Clip top bottle, like the one in the video)
7. Do not shake the bottle too much once the wine has been bottled. (imagine a bottle of coca cola)
8. In bottle fermentation - 2 days at room temperature. If you want to ferment it for longer, make sure you open the cap & release the CO2 once. This is EXTREMELY IMPORTANT else the gas pressure will keep building inside
9. You can store this in the fridge once ready. This will slow down the fermentation further.
