How To make Pasulj (Serbian Bean Soup)
1 lb Dried white beans (navy or
-cannellini) 2 Onions, chopped
3 Cloves garlic, minced
3 Bay leaves
2 tb Chopped parsley
2 tb Tomato paste
1 lg Carrot, scraped and sliced
5 To 6 whole peppercorns
1 lb Kielbasa, thickly sliced
1/2 tb Salt
2 tb Olive oil
1 ts Paprika
2 tb Flour
You will need a large saucepan. Pick over the beans for bits of grit and chaff, and rinse them twice in cold water. Put the beans in a large saucepan and cover them with water to a depth of 1 to 2 inches. Bring the water to a boil and then turn down the heat. Leave to simmer gently for half an hour. Remove the pan from the heat and pour in enough cold water to cover the beans to a depth of 3 inches. The beans will settle on the bottom. Leave them for a minute or two; then pour off the water and replace with fresh water. Bring the water to a boil and then turn down the heat to simmer. Add the onions, garlic, bay leaves, parsley, tomato paste, carrot, and peppercorns to the beans. Cook gently over very low heat for 1 1/2 to 2 hours, until the beans are soft. After 45 minutes of the cooking, add the kielbasa. Fifteen minutes before you are ready to serve, add the salt and prepare a liaison for the soup. Heat the oil until it is smoking lightly; then quickly stir in the paprika, followed by the flour. Mix to a thin paste. Add this to the soup, stirring well. Simmer for 5 minutes, until the soup is thick and rich. Serve with plenty of bread and good red wine. Serves 5 to 6. Pasulj - Balkan Style Beans
Pasulj is the classic bean soup from the Balkans, this time made with canned beans to make the recipe quicker and easier.
If you want to use dry beans, be sure to soak them overnight and rinse them well, then cook for an hour or 90 minutes and rinse again before you start with the rest of the recipe.
I used the following ingredients for two people, but this is a very forgiving recipe, so feel free to experiment.
You can use a different sausage, or leave it out for a vegetarian version.
INGREDIENTS
Main:
2 cans white or brown beans
1 smoked sausage, cut in pieces
Vegetables:
1 large onion, finely diced
2 carrots, chunked
1 piece celeriac, chunked
3 cloves garlic, chunked
Herbs and spices:
2 bay leaf
1 tsp paprika
1/2 tsp pepper corn
1/2 tsp marjoram
1/2 tsp ground caraway
Both caraway and marjoram should help with any beans-related issues.
Other:
700 ml water
tomato paste
salt & pepper to taste
Roux:
2 tbsp oil
1 tbsp flour
1/2 tsp paprika

Recipe:
2 carrots

1.5 liters (6 glasses) water
3 black peppercorns

1 celery stalk
1 can of chopped tomatoes
2 cans of white beans
100 g spinach
2 teaspoons dried basil
1 teaspoon dried oregano
salt to taste
pepper to taste

Hi, welcome to Jovie's Home!
Today my Great-Aunt is teaching me how to make her version of the Dutch Bruine Bonen Soup (also known as Pasulj in Serbian).
Recipe:
500 grams of dried beans. Soaked overnight in water.
Smoked meat (pork, smoked bacon or beef, whatever you like) OPTIONAL.
2 carrots, chopped
2 small white onions, chopped
4 cloves of garlic (to taste, whatever you like)
2 bay leaves
***Combine all of the above in a huge pot and fill with water. Bring to boil, reduce heat, cover and simmer for 45 minutes***
Cut up a bunch of fresh parsley
Mix together 2-3 teaspoons flour, 1-2 teaspoons salt, 1-2 teaspoons smoked paprika powder.
Add some water to make a roux.
Mix into the soup, bring to a boil, and allow it to thicken.
Serve and ENJOY!
