Prepare the basic meatballs except :
add coconut before mixing the ingredients. Shape the mixture into 3/4-inch meatballs and bake at 400 degrees F. for about 15 minutes. Drain off the excess fat. In a large skillet, heat the remaining ingredients to boiling. Add the meatballs, cover and simmer, stirring occasionally, until the sauce thickens and meatballs are glazed, about 20 minutes. Serve with wooden or plastic picks.

Directions: • Preheat oven to 400 degrees F. Spread the meatballs onto a baking sheet in a single layer, bake until heated through and the meatballs has browned a bit. Make sure to flip the meatballs while baking for even browning. • Meanwhile in a medium size saucepan, pour in the grape jelly and ketchup, turn the heat to low and allow the sauce to come to a simmer. The grape jelly will dissolve and you’ll have a smooth consistency sauce. • Continue stirring occasionally to avoid the sauce from burning. Once the sauce has the smooth consistency, turn the heat off and set the sauce to the side to cool. • Remove the meatballs from the oven and transfer into a slow cooker, pour the sauce over the meatballs, mix well to coat all the meatballs with the sauce. Set your slow cooker to low for about 3 to 4 hours depending on how hot your slow cooker gets. • Make sure to stir the meatballs every hour to an hour and a half to rotate the meatballs. Serve as is in the slow cooker or transfer to a platter. Enjoy!
