Chocolate Chip Cookie Fudge ♥ Raw Vegan!
8 ounces or raw organic cacao butter
1 cup of raw organic cashews soaked overnight
3/4 cup of raw organic coconut nectar (sub: maple syrup)
2 tsps of organic no-alcohol vanilla extract (sub: vanilla bean)
1 handful of 100% raw cacao chocolate chips (sub: 70% dark chocolate chips)

Coconut Oil Chocolates
Oh my gosh — this chocolate! It is so simple, simply delicious and dangerously delectable.
This easy recipe is full of healthy goodness — a treat that you can actually feel good about indulging in. We’re talking dairy free, gluten free, preservative free, whole, organic amazingness!
With each delicious nibble you’re getting powerful fuel for your brain, precious polyphenols, and a generous dose of antioxidants. Did I mention that chocolate is GOOD FOR YOU? It is! Clean, whole food, low sugar, raw, organic chocolate, that is.
Here are just a few points about the studied properties of these amazing ingredients:
ORGANIC VIRGIN COCONUT OIL:
- helps with weight loss by improving fat burning
- contains lauric acid that kills harmful bacteria, viruses and fungi
protects skin and hair
- raises HDL (good) cholesterol
- improves brain function
Coconut oil is just as healthy for pets as it is for people! Add it to their daily regimen to upgrade their health too.
RAW ORGANIC CACAO POWDER:
- Natural mood elevator
- High in magnesium, a mineral that is required by hundreds of chemical reactions in the body and is often depleted.
- High antioxidant content (even higher than blueberries!) Antioxidants eliminate free radicals that cause cell damage leading to aging and disease processes.
WHAT'S THE DIFFERENCE BETWEEN CACAO AND COCOA POWDER?
Typical cocoa powder is roasted and chemically processed, damaging many of the beneficial nutrients. Raw organic cacao powder is made from the pesticide-free, non GMO cacao bean — the only processing is grinding it into a powder which retains all the amazing health benefits.

Let’s get busy making these yummy things!

Ingredients:
1/2 cup organic virgin coconut oil
1/2 cup raw organic cacao powder
2 teaspoons of vanilla
2 tablespoons of maple syrup*
course sea salt
*for keto/low-carb/sugar free chocolates use 15 drops of monk fruit, stevia, or sweetener of choice, adjust to taste. Typically the desire for sweetness is less after adapting to low-carb eating, so 15 drops is not overly sweet and may be bitter if you are not used to it. Make it the way you like it!
Instructions:
1. Before you begin, set your chocolate molds on a stable flat surface (like a cookie sheet or cutting board) that you can easily fit in your refrigerator or freezer, make space in the fridge for your chocolates to cool.
2. Melt 1/2 cup of coconut oil over very low heat.
3. Add sweetener and vanilla, stir to combine.
4. Add 1/2 cup of cacao powder and gently whisk over low heat until smooth and combined.
5. Transfer chocolate to a pourable glass container.
6. Slowly pour liquid chocolate into silicone molds.
7. Sprinkle with course sea salt (optional but recommended!)
8. Refrigerate or freeze for at least 30 minutes. I typically put them in the fridge to firm up, then freeze them for a little while longer so that they pop out of the molds even easier.
9. Once thoroughly solidified, invert mold and pop the chocolates out.
10. Store in an air-tight glass container in the fridge or freezer. DO NOT store at room temperature; they will melt!
11. ENJOY!
