-toppings Syrup; your choice Confectioners sugar Brown sugar Fruit mixed with yogurt Preheat oven to 450F. Grease well a 13x9x2-inch baking dish. Combine eggs and flour in bowl. Add milk, butter, and salt; mix well. Pour into prepared dish. Bake for 15-20 min or until puffed. Cut into serving pieces. Serve with desired toppings. about 3 years ago - gave me these 2 recipes - dry rub and sauce: Dry Rub: 4 tsp paprika, 2 tsp salt, 2 tsp onion powder, 2 tsp grnd black pepper, 2 tsp white pepper, 1 tsp cayenne >>> pepper. Mix in jar, cover and shake well to mix. Sprinke rub liberally on ribs. Allow to stand 20-30 mins at room temp until rub appears wet. Prepare smoker for long, slow cooking using h chips for flavor. Cook ribs, bone side down at 230 degrees using indirect heat. Turn & cook 2 more hrs. Turn & cook 1 more hr. During last 15 mins, baste w bbq sauce (see below) diluted by 1/2 w water. Serve w warm, undiluted sauce on the side. Sauce: 6 tbsp salt, 6 tbsp black pepper, 6 tsp chili powder, 4 cups ketchup, 4 cups w vinegar, 4 cups water, >>>> 1 onion, large, yellow, diced, 1/2 cup sorghum molasses. Combine ingredients in large saucepan. Bring to rolling boil, reduce heat and simmer 11/2 hrs, stirring every 10 mins or so. There are few breakfast/brunch items as delicious, and visually impressive as the Dutch Baby, and when you consider how fast and simple they are to make, you have to wonder why they aren’t on every restaurant menu. Maybe one day, but for now we’ll just make them at home, preferably with a handful of sweet blueberries tossed in.

BETH'S DUTCH BABY PANCAKE RECIPE
Serves 4-6

INGREDIENTS:
3 tbsp (45g) unsalted butter
½ cup (60 g) of flour
¼ tsp (1.75ml) salt
1 tbsp (12g) sugar
1 cup (240 ml) of milk
2 eggs
1 tsp (5 ml) vanilla
1 lemon
1 tbsp (7g) powdered sugar garnish
*Serve with fresh lemon wedges or Raspberry Jam
METHOD:
Preheat Oven to 400F (200C)
In a medium bowl whisk together the flour and the milk until smooth, then add the eggs, salt, sugar and vanilla. Whisk to combine and then set aside.
Place butter in an oven safe skillet, place skillet in the pre-heated oven. Watch pan closely and once butter is sizzling, pour batter into pan. Shut the door (do not open!) and allow pancake to bake for 16-18 mins.
Remove from oven, and dust with powdered sugar.
Cut into wedges and serve. With fresh lemon wedges (or raspberry jam)

***RECIPE***
eggs (one per person, I do 2-3 in a 10 in / 25 cm pan)
milk (1/3 cup, 80mL per egg)
flour (1/3 cup, 40g per egg, and I like to replace up to half my flour with starch)
salt (a pinch per egg)
sugar (1 teaspoon per egg, sweet or savory)
vanilla (only for sweet)
spreadable cheese, like ricotta/brie/mascarpone (OPTIONAL 1 tablespoon per egg, improves the taste but makes it not puff as much)
butter
toppings (lemon juice and powdered sugar is nice for sweet, eggs/salami/onion is nice for savory)
If possible, warm the eggs and the milk before mixing. Combine the eggs, salt, sugar and vanilla (if using) in a mixing bowl and whisk until frothy. Whisk in the flour until smooth, then whisk in the milk. Or you could just dump all of that in the blender at once. Let the batter sit for at least 20 minutes before baking.
Put your pan (nonstick or cast iron) in the oven and get the oven heating to 425ºF/220ºC. When it's all the way hot, take the pan out of the oven and melt in a thick film of butter. Pour in the batter and return the pan to the oven. Bake until puffy and golden (mine took 20 minutes).
If you want to cook some eggs on top like I do in the video, bake until almost done, pull it out, put on your eggs/seasonings/onions/salami/whatever and return to the pan for a few minutes until the yolk is as firm as you want it.
Transfer to a cooling rack and let it steam out before you eat.
