How To make Puff Oven Pancakes
PANCAKES:
4 tb Butter
4 Eggs
2/3 c Milk
2/3 c Pancake mix
FIESTA FRUIT TOPPING:
10 oz Raspberries
1 c Pineapple chunks
1 Bananas
1/4 c Sour cream
1/4 c Sugar, brown
Preheat oven to 450. Melt 2 tb butter in each of two 9" pie plates in oven. In blender, combine eggs, milk, and pancake mix. Pour batter into pie plates. Bake about 18 minutes, until pancakes are puffy and browned. Do not open oven while pancakes are cooking. Spoon raspberries on top of each warm Puff Oven Pancake. Top with drained pineapple chunks and sliced banana. Sprinkle brown sugar over top. Top with sour cream. Or sprinkle 1-1/2 ts lemon juice over top of each warm Puff Oven Pancake. Sprinkle powdered sugar over top. Serve immediately. Lupin Flour Puff Pancake || The Keto Kitchen
[RECIPE IN THIS DESCRIPTION] Lupin Flour Puff Pancake.
--Miracle Flour was provided to The Keto Kitchen free of charge by Wholesome Provisions--
Similar to a Dutch Baby pancake (or a sheet pan pancake), this pancake is fluffy (when freshly cooked) and tastes somewhat like an egg tart. It works well on it's own but is extra special with lemon juice and a bit more sweetener sprinkled on the top!

INGREDIENTS:
- 3 Large Eggs
- 1/2 cup (125ml) Sour Cream OR Greek Yogurt
- 4 tbsp Sweetener (I used Erythritol)
- 1 tsp Baking Powder
- 1 tbsp Almond Flour
- 2 tbsp Lupin Flour (I used Miracle Flour -
- 2 tbsp Butter
OPTIONAL: 1/2 tsp Vanilla Extract (or a flavoring of your choice!)
METHOD:
1. Preheat oven to 200c/400f. Prepare a medium baking dish by adding the butter to it and placing it in the oven until the butter has melted.
2. In a medium bowl, add ALL other ingredients and whisk until you have a smooth pancake batter.
3. Pour into the baking dish with melted butter. Place in the oven for 12-18 minutes, or until the top and edges are browning and the middle has set.
4. Remove from the oven, cut into 4 and enjoy with any keto toppings of your choice!
